Pizza has been done by countless people for hundreds of years and it tends to trend in the wrong direction. Cheaper, faster, and low quality.
That's not how this man does pie. He took the time to find a real New Yorker, who knows the pizza game inside and out, flew him out and sat with him for a few weeks, to learn how to do everything from scratch.

The whey that's left from making the cheese is turned into house made butter. He makes his own butter! I tried a scoop today and it's stunning. Very creamy, nice mouth feel, and perfectly salted with sea salt.
The brick oven gets so hot during the day, that he can roast tomatoes in it overnight. Roasting like this reducers the acidity significantly and gives the tomato sauce that fresh, tangy tomato flavor that we allove so much!
If you get a chance to come down here, do it. Do it tomorrow and then again the next day. Bring the baseball team or the soccer team and eat as many pizzas as you can handle.

Yes, they can set up a table outside for us but stated it is so hot out & and yes, it was in the middle of the day yesterday. (SO VERY HOT ). When we arrived, the owners were husband & wife and saw our poodle. They said they are dog friendly and dog lovers. There were no customers at this time, so they let us sit inside. They gave our poodle a Trader Joe's dog treat, to our surprise, our very picky poodle loved it. The owners were very friendly, and we got to speak for a while. Then came the AMAZING PIZZA . It was perfectly cooked. The crust was thin & crispy, just like we like it. We got to eat this delicious pizza we ordered a 1/2 -1/2 pizza a #2. Sausage pepperoni, mushrooms, bell peppers, black olives & #11. BBQ Chicken Pineapple, Red Onions. Their sauce and sausages are homemade. It was so good. Then we had to try their #8. Ordered online for pick-up, very easy process, at the time (not to busy) they were ready in about 15 min. Walked in and was immediately greeted and welcomed, thanked for coming in. Could smell the wood fired pizza oven the minute you walk in. The crust is truly thin crust, crispy and slightly charred on the bottom to perfection. The toppings were fresh and done perfectly. The pizza is not over sauced in my opinion, just the right amount to add a subtle somewhat savory flavor that did not take away from the toppings, but rather infused with the toppings and brought it all together. Learned that they make their own sausage and lamb in house, so that will be on my next order. They take pride in there pizza which shows through the flavor. The cons: I should have ordered family size! as the personal size left us wanting more. But being disappointed by so many places we didn't want to take a chance.
