We really, really wanted to enjoy this place. We drove 45 minutes from Appleton for my birthday dinner. I just feel like they missed the mark in so many places. To start with our drinks, my husbands old fashioned was very, very heavy on the bitters so he chose to order a beer next. The beer was very flat so he did decide to send that back and the waiter was very nice about replacing it. They also did not charge us for the beers which was very kind.
We had the chili and creamy mushroom lentil soup as appetizers - both were delicious and came out fast. They offered bread and butter as well which was delicious, but the bread was cold and would have just been better served warm.
Our food finally came out about 45 minutes after ordering. I ordered the pistachio crusted striped bass. The fish was initially really good but when I took a bite of the pumpkin risotto it was not fully cooked and you could taste and smell the wine it was cooked in STRONGLY. It also had bacon on it (I did not know “lardons” meant bacon) and I do not eat meat (only fish). The waiter was again very kind and offered to switch it out so I opted for the salmon.
The coho salmon special was much better, but it was still extremely salty. The fingerling potato’s were the real saving grace of the meal and really the only outstanding part of either of our meals.
My husband got a steak and said it was good - an above average steak.
My husband and I regularly go out to eat and frequent many popular restaurants in the area. We have only ever sent back food or drinks once before this and we had to send two different things.
This is a little petty, but when our waitress brought out the dessert menu my husband mentioned that it was my birthday and asked if they do a birthday dessert (we had seen someone else get one earlier) and she confirmed they did and very nicely said happy birthday and offered to bring one out. We thanked her. She came back about 10 minutes later with no dessert, but offered to take my salmon back to box it up.
She brought my salmon back out (which said happy birthday on it) and asked if we looked at the dessert menu and I asked my husband if he was going to get something as well and he said no. So we thought she was going to bring the dessert then, but instead she brought our check. When we paid she once again said happy birthday, but just glazed over the fact that she offered this dessert and never brought it. I don’t really care about getting a “special dessert”, but the interaction was very bizarre and seemed kind of rude which was odd because our waiter had been so wonderful up to that point.
Maybe we hit it on a bad night or maybe it’s better served as a lunch spot, but we won’t be going back. If we’re going to spend $160 on a meal it really needs to knock it out of the park and not...

Upon entering you come into a small crowded bar, unclear where to check in. Hostess stands at the end of the bar? She was very nice and efficient. 2 bar stools opened up so we quickly sat and ordered a drink. Again friendly and efficient. We were seated very quickly at the time of our reservation. So far so good. We were brought through a couple small rooms into the back to a table by a window. It was a very cold night, so I could feel a draft from the window. (most of the time probably not an issue it was like 5 degrees this night) The menu prices honestly made my eyes wide. I expected higher than average for our area but to see a $100 steak made me gasp. The atmosphere does not feel high end at all. No luxurious finishes or furniture- quaint, but not luxury. Our server was friendly, but nothing above and beyond. We ordered an appetizer which looked impressive and was excellent. We ordered our entrees and waited and waited. It seemed to take a long time. We were busy conversing so I can’t say how long, but we both had empty drinks, empty plates. It was awhile. When our food arrived, looked fantastic. My steak (not the $100 option) was done perfectly and was very good-I can’t say the best I ever had but was very good. My veggies were hard/raw. I guess this is normal in high end cuisine? I didn’t care for them this way. My dates entree (ravioli) was cold, not much to it. She said about 6 raviolis and her veggies were also raw/hard. The sauce in her dish was so thin she couldn’t eat it as it ran off any piece of food she stabbed with her fork. She was disappointed. All in. $131 for our bill and tip. We arrived at the quaint corner od Suamico where Chives is tucked away on a side street.The restaurant has a small dining area that is very intimate. We started out with a delicious bread that was served with chive butter. We ordered the goat cheese wontons that were the winner of the meal IMO. Thinly veiled delicious goat cheese and chicken stuffed wontons in a sweet thai chili mae poy sauce. Outstanding.
She ordered the fish and chips while I ordered the hanger steak. The hanger steak was cooked to perfection but was a little tougher than expected for a Wagyu cut. The flavor was fantastic. It was plated on a bed of chive potatoes that normally has cooked carrots but I substituted for brocollini. The biggest disappointment and failure of the meal for me was the potatoes. I was expecting so much more and they were simply, not good. I juice a lot and the flavor were as if you took ground up greens mixed with potatoes. I ate two bites. With it being Chives restaurant I wouldn't have expected a signature recipe to miss the mark so badly.
