Sfoglini Pasta — Restaurant in Town of Coxsackie

Outstanding and so delicious! We learned about Sfoglini Cascatelli when we had the pleasure of listening to the podcast with our daughter while driving from Denver to Telluride during the holidays in 2021. We were excited to finally get to try Cascatelli and it was outstanding! The way the pasta held its shape was remarkable and the taste was yummalicious! We recently were visiting Colorado again and our daughter gifted us some new Sfoglini pasta boxes. Tonight we made Vesuvio….such a fun fun fun shape! It’s like a spiral volcano and it too did not disappoint. We enjoyed it even plain as the pasta is delicious and holds its amazing shape! Can’t wait to try quattronini next!!! Thanks Dan! After listening a great review on NPR news I decided to order their new Cascatelli. It was over $50 for two boxes delivered but I went for it anyway. After waiting for 3 months it was time to cancel my order. I had waited long enough. The credit card that I paid the order with was lost and they don’t want to credit my new card. $50 for two boxes of pasta is a lot, $50 for nothing is really deceiving. Good pasta severely overpriced. DeCecco, Del Verde and La Molisana are the real thing Sfoglini is attempting to imitate, and with some success, albeit at a lofty price point.
