Mosaic Cafe and Catering is amazing! Pat Long, who is the owner, goes above and beyond with communicating and meeting the requests of the bride. We had never utilized a caterer until this wedding and had experienced a previous food tasting earlier in the week, that hadn't gone well, so we weren't sure what to expect with this food tasting. We walked in to a table that was set with formal dinnerware and was very elegant but not intimidating. Pat made us feel very comfortable, was friendly and answered all our questions. The food was amazing, very tasty, well seasoned and the portions were a good size. We had expected small samples and by the time we were finished with the tasting, we felt like we had a full meal! He definitely does not skimp on the food portion size for a tasting which was really nice and is a huge help when trying to decide what food we wanted. He gave us four entrees to choose from to try, along with sides, and salad.

Throughout the wedding planning time, we communicated via email and Pat was always quick to respond to any of our questions. When we arrived at the reception, the food was ready to go on our timeline and the staff was very friendly and helpful. One of our concerns was getting people through the buffet line in a timely and efficient manner. We had a big wedding party along with about 350 guests to serve. Pat anticipated that and had two buffet lines with serving being done on both sides and the lines went quickly and smoothly. The food was served hot and the staff kept it coming so no one had to wait for it to be refilled. Mosaic also provided, tea, lemonade and coffee. We've had so many of our guests tell us how good the food was, how nice it was to have it still be hot when served and how quickly they were able to get their food and how much they enjoyed it. Mosaic also offers the option to have the food plated and served to each guest if you don't want to utilize a buffet line which is a nice option to have. They offered to cut and plate all the cake as well which gave us one less thing to have to think about. Other caterers we checked, did not offer that.

Pat's prices are competitive with other caterers but the difference is you get a lot of bang for your buck with him and your guests will walk away with a positive impression about the food and are full and content having enjoyed their meal. That was our goal and Pat went over an above to meet that goal for us. He made the catering part of the wedding worry free and something we didn't have to oversee at the reception which made us able to enjoy our reception even more. Pat and his team at Cafe Mosaic are top notch! We used his catering services for the first wedding in our family of six children. Pat patiently listened to the vision of my daughter, answered all of our questions with regards to the various levels of service, and was diligent in responding to changes and clarifications. The food was phenomenal, and we had numerous guests comment on the quality of the beef tips and the sides. As one guest (who worked in the event planning industry at one point) said, "Green beans can almost be a throwaway side, but these were just right -- not too soft, and seasoned just right with the bacon. They were delicious!" To round out the evening, the staff member sought me out to explain exactly how they packed the extra cake and food so that it would be easy to take home after the wedding. When my daughter and I first started planning, I asked her what the most important things would be to her in the wedding budget. She ephatically said the venue and the photography; my husband and I said our most important piece of the planning was the catering. We wanted a lovely meal at a reasonable starting price. We were able to honor both the bride's top priorities and our top priority by choosing Cafe Mosaic as our caterer.
