Update: We have been here about half a dozen times since they opened. Dine in and take out. The food is really great. Recent order was the holiday sushi platter. Tasted awesome! However Iāve never been here and had service that matches the price and at times just plain bad service. They have top notch food, nice atmosphere, but itās so unorganized and servers look confused on what to do. Obviously management hasnāt figured out how to run a restaurant and my ānew restaurantā patience is almost out. When you order take out you will get a text saying order is ready to pick up. But that has nothing to do with your order being ready. Itās just automated based on your pick up time. I had to wait 15 minutes because hostess running around picking up odd jobs. Then told to come back in 30 minutes. Horrible system. Management needs to get organized and figure it out. Sat at sushi bar once and chefs never even acknowledged we were there. I had to ask after 15 minutes of staring at them for service. They certainly have no idea how Japanese restaurants run where service is the star.
Our first time checking this place out. Great job West Linn bringing in a higher level sushi restaurant! This isnāt kaitenzushi i.e. conveyor belt sushi with colored plates. You should expect to pay $50-60 per person for dinner, minus cocktails. Restaurant atmosphere is very nice with several seating options like booths, bar, sushi bar, and one large table for a big group. Nigiri sushi is a bit on the smaller size, even for Japanese standards. My wife, who is Japanese and her father is a sushi master in Japan, said itās sort of like Ginza sushi size. Fish is excellent quality and I believe our server said they fly in especially from Japan and Spain. We also ordered tempura and karaage which were great too. Also a lot of fusion rolls for the Americans :-) They are new and I believe still working through things. Menu has a lot of spelling mistakes! Request: give oshibori towels ArigatouGozaimashita!...

Well, now that we've found Sushi Kuni, we can rest easy.
We went in with reasonable expectations; after all it was a sushi restaurant in a strip mall and mostly empty on a Tuesday night. However, even if we had gone in with drastically different ideas on how well the night would go, we still would have had any expectations surpassed.
We sat and got chatting with Chef Aki who was extremely welcoming and friendly, and set a perfect tone for the evening. The waitress took our drink order, and bar manager Michael brought out an excellent sake flight to start things out.
As our first dish of our Omakase order was brought out, I realized just how exceptional our meal was about to be. Fresh uni, served on a seared scallop on top of a sesame cracker with seaweed garnish, adorned with caviar and gold flake. Again, expectations. Thoroughly shattered only on plate one.
As we continued our night, the food and host continued to be nothing short of fantastic. We ordered a round of cocktails, and even though the bar was out of one ingredient for one of the drinks, Michael was able to improvise and come up with something that I can only imagine was better than what we would have originally received.
I was so impressed that I asked for Michael to make me whatever he wanted, and he brought up something off the upcoming cocktail menu that wasn't available just yet. It was some sort of fruity smoky cocktail, and while I don't remember all the ingredients, all I can say is that when the fall 2023 cocktail menu comes out, you really owe it to yourself to give it a try.
We finished our meal and drinks, and concluded that we have found our new go-to spot for a treat to ourselves, and can't recommend Sushi Kuni...
