This was a hard call, and I wish Google would let me rate 4.5. I finally decided to just round up to 5.
For Maine, this was outstanding, phenomenal Mexican food. The fajitas were excellent and plentiful. The beans and rice, the salsa, the chips, the draft beer options, the guac, all delicious. Overall, it was better than most of the Mexican food places up here, for sure. Probably 3rd or 4th best of all we've tried so far.
The service was great, as well. Lovely ambiance, fast and attentive service, crazy fast food arrival.
The only two reasons I would say 4.5: I was disappointed in the quesabirria. It was delicious but absolutely NOT authentic quesabirria, which should be a seriously unhealthy meal. Fajita Grill's version was like a healthy version of the concept. The tortillas were dry, not soaked in birria before cooking. There was no melted cheese inside or out. The "consomme" had no fat and little seasoning. Overall, these were more like carnitas but made with beef roast, and served with something closer to au jus. Again, it was delicious... But it absolutely wasn't what I ordered, wanted, or would have chosen if I'd known how it would come out. I hope I get a chance to go back and try the poblanos.
The queso is served chilled, which shouldn't even be possible. Queso, good and real queso dip, should solidify when it gets cold. It should be too thick to even dip a chip in once it gets cool. The waitress warmed it, and it was as thin as water and tasted like it was walked through a room where queso was stored... But mostly it just tasted like crema.
Again, overall the food was honestly delicious, but if you are Southern and you see quesabirria, al pastor, elote (they called it something else, but that's what it looked like) and other delightful surprises on the menu... Proceed...

This is a 10 star establishment being managed by 10 star people who for my family recently went way above and beyond anything we could have imagined. My mom loved the Fajita Grill. That is where she wanted to celebrate life’s special occasions. She was always there surrounded by family for birthdays, anniversaries, after her grandchildren’s events….. this is where she wanted us to meet and celebrate as a family. The fajita grill staff has always treated us as a family and are warm and welcoming. My mom recently passed away and as my family and I were going through the painful and sad process of trying to plan a special remembrance of our mother there were so many traditional options, but my mom was far from a traditional lady. Knowing how much mom loved Fajita Grill my brothers approached the owner and asked if we could use a part of the restaurant for a celebration of mom’s life. Not only did we get a part of the restaurant, they closed business for 4 hours so we could allow what appeared to be around 300 people or more come by and remember my mother, have a taco and grab my mom’s favorite margarita. It was a perfect venue and a blessed event and I will be forever grateful for what they did for me...

Chips and salsa to start - nice. Added some queso to that to keep things going strong. Also nice.
Ordered the chicken mole and the most remarkable thing on the plate was the beans. The rice tasted days old, and the chicken was tough and not picked well, so every other bite had some gristle. The mole sauce was kind of earthy and smokey, but not at all pleasant.
Other folks at the table said their meals ranged from "pretty okay" to delicious, and I think those meals included some chicken tacos, a few tamales (which looked good), and a salad.
The margaritas were great! They should list the prices on the drink menu, but I don't recall them being highway robbery on the bill either. Service was fine, but it did take about 20 minutes from when we asked for the check to when we got our cards back to sign. Everything seemed clean and I appreciated the big open space with a welcoming atmosphere.
I would come back to try them at lunch or for a couple rounds of margaritas, but $19 for a very subpar chicken entree was pretty...
