This is the best experience for a cooking class I have ever been to. Puspa brings you shear delight in teaching you how to prepare and cook many Balinese dishes.
Puspa is a joy to learn from. She and her team work well to help you understand how to prepare and cook Balinese dishes.
The class area is well appointed and retains the family compound setting. We could easily work at the work stations. All equipment is clean and modern. Cleaning and cleanliness is number 1 priority. Only the freshest ingredients are used. Free Tea, coffee and water throughout the morning. The instructions interesting and varied, everyone gets a chance at the work stations to prepare and cook different dishes.
All of us learned so much about hands on cooking.
We worked steadily and with confidence due to the excellent teaching and assistance from Puspa's team of cooking helpers.
Our morning went well and flowed easily, many participants from all over the world coming together, sharing the joy of learning about preparing food, and Balinese culture.

PAON Cooking Class is a hands on class, be prepared to chop, slice, and grind spices in traditional manner, you'll learn alot af nice dishes to prepare and you get a cookbook at the end of your class to take home.
It's wonderful to prepare and make all these dishes and then sit down at beautiful tables and enjoy your meal collectively. Meat eaters, vegan and vegetarian all catered for in dishes.

First we were picked up from our hotel and taken to the local market to see some of the different fruits and spices we would be working with. Then the co-owner, Wayan drove us to his home where his wife Puspa set up their cookery school in 2007. This is no modest home but a hugely impressive compound comprising their own three separate sleeping βhousesβ, private temple and separate display area for special occasions. Tucked behind this a large well laid out open plan area with dining areas and those for cooking and demonstrations. Two exceedingly pleasant young ladies first took us (there were seven in our group), through all the ingredients which had been laid out for the basic yellow sauce mix and six additional dishes we were to be cooking. Working in pairs we chopped, grated, pounded and sliced till all was considered ready and then we prepared each of the dishes and set about cooking them. I will not tell you here what we cooked as that would spoil it for you but suffice it to say when it got to the point of sitting down and consuming the results of all our labours it was one of the best and certainly the most authentic Indonesian/Balinese meals we have had. At this time Puspa joined us both to make sure everything was ok but to also prepare for us one final, very tasty, banana dessert. Β Β Β Read moreFirstly, the class is so well orchestrated. As you are working on something g with Pupsa, her team moves other items in the background so they are ready for us as soon as we need them. Itβs like a well choreographed dance.
You start by seeing all the ingredients that need prepping right in front at the beginning, all beautifully presented. Pupsa assigns us different tasks (cutting, grinding, etc).
We make 2 sauces that will be used across the whole menu: a peanut sauce and a yellow curry sauce (Base Gede Bumbu Kuning). We then start preparing the seven dishes, which includes one salad and a desert. Pupsa adapts the amount of chilis (given the mostly North American audience) and also helps one member of our group ensure that her version of her meal is gluten-free! We are all participating in all the cooking activities, whether they are stir frying, steaming, blending, mixing, presenting etc. Pupsa also recommends substitutions for items more difficult to find in some part of our countries.
And after all of that, each dish we are served are delicious.
This all happens outside, in a housing complex specially fit for this purpose. A beautiful property and gardens surround us. Even though the temperature is in the mid 80s F, there is a nice breeze and ceiling fans also provide relief.
