Garys Choice — Attraction in Edgewater

I heard about Gary's six years ago and said to myself that I will have to check it out. Fast forward six years. I finally stop in the store to check it out. It was like going back in time to a Butcher Shop in Brooklyn NY when I was a kid, the only thing that was missing was the sawdust on the floor. First off the place is very clean and the workers are friendly and helpful. I needed some fish for dinner and they have a small but good variety of fish at good prices. I picked up some cod fish filets to make cod fish cakes, they were delicious. As I was going up to pay for them I seen the store made italian sausage and just couldn't help my self and ordered eight. Then I was thrown back in time again when he asked how I would like them wrapped up, four to a package please I said. I also pickup breakfast sausage meat (for sausage gravy, also delicious) that he made into 8 oz packages for me. I also went and got more fish Flounder, Salman and breaded shrimp. This is a fabulous locally owned butcher shop operated by some really nice people. The beef tenderloin steaks cut by the owner were perfect in size (five steaks at about 9 oz. each) and every bite was edible and delicious. No wasted meat at all. We prepped in sous vide at 125 degrees for 70 minutes and finished in a pipping hot iron skillet with a good amount of melted unsalted butter for basting for 90 seconds per side on the gas grill. Excellent quality and service. I ordered a special whole loin of pork roast. Mik, the butcher. separated the whole ribs from the boneless roast and then hand tied it meticulously.The lovely roast reminded me of the pork roasts my grandmother used to make. Succulent and the meat just fell off the bones. I made an apple and onion stuffing as well. I have ordered other meats from Gary's and all are so much better than supermarket varieties.
