Not everyone has gone "down the shore" on this beautiful Saturday. Quite a few individuals, including ourselves, visited the Elmwood Park Multi-Cultural Festival Street Fair on Market Street to check out vendor markets, interactive activities, art demonstrations, games, and food trucks at an all-in-one-day event. Just in time for lunch, one of us ended up getting a waffle cone with chocolate ice cream and chocolate syrup. From one of the food trucks, Carinderia on Wheels ordered the veggie pancit and veggie spring roll (lumpia). Carinderias (Tagalog: karinderya) are small Filipino 🇵🇭 eating establishments, typically in a market or by the roadside. Pancit is a classic Filipino recipe consisting of an easy stir-fried rice noodle served with snow peas, cabbage, and carrots. It was tasty and not greasy or messy. The spring roll has a crepe-like wrapping and comes with carrots, green beans (string beans), bean sprouts, and cabbage.
