My name is Dana, and I am new to the East Bay area. I have been frequenting the local farmer's markets. I found Paulo Sausage Company, at both Livermore and San Ramon market's on the weekends. I am a foodie, go on culinary pursuits, "Chef" for friends and family, and have eaten food all around the country, including international travel! I share this because I have to say this is the best pork sausage I have ever eaten - anywhere!! The pork is tender and incredible; the meat-to-fat ratio is perfect. There is so much meat, but it never dries!! The flavors are ALL on point!! I can't believe how good these are! They need a Michelin star for these beautiful works of art! Am I exaggerating a little? No! They are that good. If you buy some, please make sure you do not overcook them! You want all the goodness and juice locked in without drying them out! I hope the company is a huge success, and I plan to write about them to a few places and hope they get noticed!
