What an amazing team here at redwall distillery! Billy and Ron are doing a fantastic job with their whiskey, vodka, and gin! My husband and I are huge whiskey drinkers and this is hands down one of our favorite whiskeys. I love their passion for creating drinks for everyone to enjoy, their inviting spirits (pun intended), and their willingness to share their experiences with us. Billy really made us feel like family. He took the time to talk to us about their distilling process and helped us understand everything that goes into all their hard work. We really appreciated the time he took to talk to us about their whiskey and love to hear that him and Ron run the whole process. Danny was our server and he was absolutely amazing!! The service was friendly and prompt. One of the staff at the bar was quite knowledgeable and answered many of our questions about the history of Redwall and the production of the spirits.
We had a Negroni with complimentary nibbles. The drink was well made with spherical ice cubes, and a fresh twist of orange. Other than the complimentary nibbles, a charcuterie board was available for purchase.
After that, we shared a flight of the Redwall spirits (vodka, gin, bourbon, and single malt). The gin was unique... in a good way. Very herbal, not too junipery. I really liked the bourbon. It wasn't sweet or cloying and a pleasure to drink neat. The single malt was good, but probably needs a little more time in the barrel.

When we arrived there were 10 existing guests and we were a party of two. Signage said have a seat and we come to you, so sit we did. After 7-8 minutes we hadnt been greeted so I went to order drinks from the bar when I was sternly told "you dont order drinks here I come to you" i chuckled and gave it another go. After 5-6 more minutes the server came took our order and we closed out thinking one would be enough at this pace. Granted the views here are why you come so I mean it is what it is. 8-10 minutes later we got our drinks, watched a bit of the sunset and left.
