I have been coming here my whole life (30+ years) and I can only hope that I will continue to for the rest of it. My most recent trip came today- I left with sirloin, brats, franks, Hungarian sausage, mustards, salads, bacon (of course), and so much more. But perhaps more than anything else, I left with feeling that the people and the traditions of the Union Pork Store make it clearly the best butcher I have and will ever know. As for my visit, I rarely come so close to closing time and almost never have the space almost to myself, but today I did, and I left the shop feeling like I was on top of the world. Jabi is a one-of-a-kind, wonderful artisan, who displays his passion in the most creative and sincere of ways. To interact with individuals who put so much passion into what they do and also believe in the human connection of old-world business is something that needs to be felt to be understood. Now, I only ramble because I would do anything to convince others to take the plunge and experience what can only be described as service centric culinary delight. Great selection of meats, sausages, bacon in lots of interesting flavor combinations. They really take pride in their products. I mostly go for the sausages, but I'm curious to try the bacon selection at some point. Look for the menu options on their FB page, as not all varieties are always available. Yes, there are some staples, but for example, my family loves the alligator sausages, and they are not always in stock. Plenty to choose from - sweet, savory, breakfasty, chicken, duck, pork, seafood. Definitely recommend. And to the reviewer who asked about the freshness of the products when they are open 4 days a week, there are plenty of fresh options. They make a large variety of sausages from all over the world. They vacation in different countries, come home and make sausages from the meats and spices of that country. If you like meats, this is your utopia. You can get some smoked fish on certain days but it's mostly meats, European cold cuts, goose & duck liver pates, etc. It's definitely worth a trip if your in the area.
