Elia gave us the pleasure of his professional cooking this weekend at Graysons Estate. The whole experience was AMAZING! Elia arrived with immaculate presentation of himself. He quickly set up a very organised work station and had a clear work program set to ensure that the nights meal would be presented at its best. He was equally friendly towards all guests giving them time to get to know him and his experience as a chef. This was perfectly balanced with him keeping his mind on his workload and also ensuring that his conversations were not overly imposing. The food had āentertainmentā value as we watched him openly prepare the gnocchi and he answered all questions with sound knowledge of the food ingredients. Every course was served with flair and excellent presentation. There was exactly the right time in between courses so that we were not rushed and the food was hot and flavoursome, complementing the food hero at each course. Particular mention must be made of the steaks which were of top quality, cooked exactly to each guests requirements - sensational and a stand out!! Elia addressed each course with a knowledgeable introduction to the ingredients used without being too detailed. His cleaning all through the courses and at the end of the evening was impeccable and the food not eaten on the night was packed away safely . From start to finish, the meal was absolutely faultless. Elia's culinary expertise shone through with each course, perfectly balancing flavours and textures.
The BBQ octopus was a standout ā tender, smoky, and grilled to perfection. It had just the right amount of char, and the sauce and crispy cannelini beans complemented it perfectly. The king prawns were huge and impressive, succulent and bursting with flavour, with a delicate seasoning that allowed the prawns to shine.
The pork belly salad was delightful, the pork had a 5/5 crispy skin and beautifully seasoned and balanced with the fresh, vibrant greens to balance out the richness of the pork.
Finally, the tomahawk steak was the crowning glory of the evening. Cooked to an ideal medium-rare, it was juicy, flavourful, and had a perfect crust that sealed in the juices. Accompanied by perfect roasted potatoes, burrata salad and soft, fluffy garlic bread. The presentation was stunning.
Elia's attention to detail, accomodation for dietary requirements and flawless execution of each dish, made for an exceptional dining experience. Cannot recommend him...

From Start to finish, everything was spectacular. The cheese and meat platter was phenomenal - you embellished us with the best ingredients Iāve ever had as an antipasto ! The portion of the entrees and mains were so generous! Thank you! Your fresh pasta was indescribable! The mains - that fish! That steak! All of those amazing sides !!!!! And on top of that you surprised us with that mouth watering brisket! I also canāt believe you made all of the tiramisu on the spot from scratch ! It was the best tiramisu!
