Tucked into the Milks Plaza shopping center in the former La Casita de Mama space- Last Biscuit is a welcome new addition to Las Vegas, New Mexico’s breakfast scene(especially on Sunday morning!). With a name like that, you’d expect biscuits to be the star—and they absolutely are. They hold up beautifully to thick-cut bacon and eggs without crumbling into chaos. It’s a rare feat: a biscuit you can actually bite into without losing half of it to your lap. Like others have said - they're big enough to save the top (nicely browned) for some jam.
Not a grab-and-go kind of place, and that’s a good thing. The bacon is a standout: thick, flavorful, and cooked just right. Green chile lovers might wish for a bit more heat, but the flavor is solid. For me- the hash browns (butter browns) are a bit soggy after you bite through the exterior. My only complaint after two visits.
Coffee here is brisk and smooth—none of that bitter bite you get from over-roasted beans. It’s the kind of cup that wakes you up without punching you in the taste buds.

Some biscuits and gravy hit the spot and if you want something hearty and delicious, this is THE SPOT. Not only does it surpass McDonalds by miles because it’s homemade and real appetizing food, I could’ve jumped for joy when I saw someone like my dad or grandpa cooking, instead of some disgruntled gen Z’er aggressively hitting a vape pen while rolling their eyes at me. The lady at the front was the one taking orders over the phone and her friendly customer service was consistent and amazing in person as well.

Flaky, buttery and crispy but that is just the beginning Last Biscuit’s best carries a very apropos name….simply the “#1”. Egg in any way you like, bacon that is thick, crispy and cooked to perfection, green chili and mayo for acidity and a mild pleasant kick. Oh goodness, goodness A high class breakfast sandwich that could compete with any top spots in the US without a doubt and…best of all it is enclaved in a desolated shopping center making it a gem in the middle of nowhere. This for sure will not be my “Last Biscuit” or nearly my penultimate but this wonderful memory of savory, gooey, crispy greatness will LAST for a very long time. Until we meet again.
