I paid for a 1.7lbs cut of steak, and I got home and weighed it myself to find only 1.1lbs.
I went back to ask why they charged so much, and they told me that was the weight of the trimmings. I never asked for it to be trimmed, and I said that they should've at least offered the fat if I'm paying $20/pound for it. They said they didn't ask because it's "mostly inedible". I ask why not trim it off the whole loin up front if it's inedible, and I was told "that's how it comes from the provider", as if it isn't their job to prepare the meat from their provider.
If you aren't going to trim the loin beforehand, but also aren't going to offer the trimmings to the customer, then it's a dishonest tactic to squeeze a few more bucks out of every cut. Play that game if you'd like, I'll find...

I go here for my meat & poultry, not cheap but well worth it, better to eat less and go for quality. Best to order ahead during the Holidays; once you go to a real butcher you'll never buy meat from a supermarket again. He also has prepared pinwheels & such that can go right on the BBQ and packages for families so you can order ahead and go pick it up, (or see if they'll deliver). Some of my favorites London Broil (seasoned), Meatloaf (ready to cook), great Crowned Roast, Chicken Cutlets, Sausage Pinwheels and Shell Steaks (to name a few).
