This is gold for chicken broth. You can make very nutritious, gelatin-like savory chicken broth with the carcass and bones. This is what goes into the soup stock of Japanese ramen (pork bones and chicken carcass) and also chicken stock for French and American cuisine. I can't debone a whole chicken every single time I need chicken stock, so being able to just get the carcass is rare and awesome. Just put the carcass in a rolling boil for 5 mins, remove and wash clean with cold water. Dump out the old water and gunk, refill with fresh new water and boil the carcass for 4-7 hours on a slow /low boil. Add aromatics if needed. French cuisine adds mirepoix to the chicken carcass and filter out the gunk by throwing away the "boat" of brown froth that floats to the top with the chopped mirepoix and boquet garni. Chinese style stock is chicken carcass, ginger, and scallions for 6 hours. Fresh fish market with whole fish that they will clean and cut to your specifications and with a huge selection outside of the typical salmon, tuna, boring that's at every other store. The rest of the aisles are full of ingredients for every asain cuisine you can think of and we love feeling inspired when we go. Friendly staff (though sometimes there's a language barrier). Luckily it is in it's own sealed refrigerator because it stinks. I love the organic mushroom packs and fresh herbs and you can't beat the prices anywhere.
