I appreciate you willing to provide a plain noodle (vegetarian) option (cheaper price too). HOWEVER, I am writing this (for my vegetarian/vegan community’s sake) that I would NOT recommend this restaurant. This is not a regular menu option (menu has no vegetarian options) so the dish wouldn’t present at its best. There are vegetarian/vegan pho elsewhere in Brisbane with actual regular menu items that can give you a better dish. The pho itself was not bad but I’ve definitely tasted many better ones (and mind you, I’ve not tried any of those top-tier levels pho in Melbourne).
What really got me was I ordered takeaway but the moment I got the order, the broth was lukewarm and it takes me 50mins to get home. However, there was no cutlery… I thought I might dine-in instead then, but the staffs didn’t seem to be happy for me to dine in when i ordered takeaway. Fully understand it’s less than an hour to closing (there were many people still dining in who ordered later than me) and you were short-staffed & busy. However, there could’ve been many other better ways to rectify the issue. I ended up borrowing a dessert spoon from a neighbouring shop. First impression of my bowl of Flash fried beef pho.... Absolutely delicious! I've had many bowls of pho in my life, but this is the most memorable.
Fresh quality ingredients including the fresh noodles. Marinated flash fried smokey beef thrown on top, Sooo tender. It took the soup to the next level. So many flavours and depth of flavour in one bowl!
I'm pretty sure my bowl of pho tonight was the best in town. And sorry, I didn't take a photo of my meal cuz I absolutely smashed it.
The rest of the family had the Special Pho with beef balls, brisket, tripe etc.. also agreed it was unquestionably a high quality dish.

Read moreNot many places do the beef rib pho so it's already a big plus that they have it on their menu, I just had to try it. The beef rib meat was tender and delicious! They also added beef balls. I couldn't appreciate the pho broth properly due to the overpowering Ngo Om (rice paddy herb) that they put in it, so I had to take out the herb and "fix" it by adding other sauces in. Maybe they could leave out this herb and put it on the side next time as an option rather than in the bowl. I think it ruined the broth for me, otherwise it'd be 5 stars. I recommend to just ask for the herb to be left out. I did appreciate this dish being served in a stone pot so it stayed hot the whole time, which was great for winter, cooking the bean sprouts.
