review no. 72 of 2024 (21/6/24) Country Cob Bakery Springvale
So on my last day in Melbourne I tee'd up a visit to Country Cob Bakery in Springvale, Melbourne.
Walking into the shop felt like I was at the holy grail of bakeries. Met with Ryan Khun (along with his brother Chan) who's the baker and owner of the stores which there are 3 of located @ Springvale, Kyneton and Boronia. The pies are made at their Bakery in Dandenong South. Now before coming to Australia these guys had never heard of a meat pie let alone taste one, from that to winning Australia's best pie, won countless pie awards and even starred on MasterChef. They've perfected the pie. The standard these guys set are lightyears ahead of some bakeries.
I got to try 2 award winning pies whilst I was there. 🏆 BBQ Beef Mac & Cheese $8.50 Best Gourmet Pie 2024 The pastry was baked perfectly, couldn't really fault it whatsoever, it has a small amount of crunch when you bit into it, the lid wasn't too flakey. It looked to be baked perfectly all the way around. It was nice tasting . The filling was more like a savoury/sweetness to it. The beef tasted amazing, nice and soft, coupled with the sauce (i'd love the recipe for the sauce). To add to the awesome flavours already they've put another spin on the pie, that was the mac and cheese. An interesting addition that worked well. Put all those flavours together and you've got yourself an award winning pie. The pie looked pretty consistent once cut, nothing oozing out it dribbling everywhere, safe to say it would have held up easily. The serving temp spot on. 🏆Cambodian Coconut Pineapple Chicken Pie - (no price as was only realised) Best Chicken Pie 2024 I won't bang on about the pastry because it was similar to pie #1 in flavour, texture and the way it was baked. This recipe was inspired by a Cambodian soup dish. It's always interesting trying these new flavours. This flavour took me way back 37 years when my Latvian grandmother used to fry up chicken thighs and rice with pineapple 🍍, same couple of ingredients, world's away in flavour. The pie had some flavours that were bold and stood out, you could pretty much taste them all. The chicken tasted amazing, nice and fresh, coupled with a light in flavour style of sauce, has a bit of savoury/sweetness happening on the palate. The consistency looked excellent, the pie looked nice and full, when cut in half, didn't look sloppy, would have held up fine and the serving temp was good. This pie was probably my favourite of the 3. Duck Panaeng Pie Can't say much about the pastry other than it was perfect, the same as pie #1 and pie #2. The pie flavours were all there, it was a lighter style of curry, could taste some peanut also. Similar to a satay but it wasn't. The duck tasted pretty good, nice and soft, wasn't too chewy, a few carrots there also. The flavours weren't too intense, were nice and subtle, and didn't overpower the star of the dish, the duck. The consistency looked pretty good, looked pretty full and packed the brim. The serving temp was spot on and it would have held up fine If you're game to try a lighter style of curry pie, this one is the pie for you. This was the second duck pie i've had, a lot better than the first

What I noticed with each pie they're pretty consistent with them being full of product along with a price that's actually priced pretty good compared to other bakeries that charge like a wounded bull for a sub standard gourmet pie.
There's an indoor dining area at the Springvale store.

Definitely not your ordinary pie with Very unique fillings like your Singaporean crab pie, spicy lobster laksa, butter chicken and such a huge variety of different fillings there is bound to be something you’ll enjoy- whether adventurous or classic.
We tried the ▪️Fish Amok $10.50 ▪️Black Forest mushroom truffle $8.20 ▪️Pepper Beef $7.20
Our favourite of the 3 was the fish pie which was SO GOOD, great flavours and very generous filling with a flaky crust like they nailed the flavours of that fish curry so well!! The truffle mushroom was so creamy and delicious and chefs kiss I would 100% go back for another pie here . I loved it but my friend thought the truffle flavour was too overpowering
You do pay a premium price for it but in my eyes it worth it- taste hits the vibe check and because of the great variety of flavours available I can’t wait to try them all! Love the different vegetarian pie options too - it’s rare to see this but I really appreciate it - absolutely fantastic for our plant...

okok lets not be hasty, i havent yet tried the classic aussie meat pie here yet however these guys make a heap of specials and unique flavours to try! the actual pastry of the meat pie is perfect, not too thick, firm, crispy and flaky on top, and holds in the insides well
i checked out their specials on this occasion and id have to say the Lobster Laksa and the Singaporean Crab was amazing and out-did the 2023 award winning Fish Amok!
that being said... being crab and lobster it definitely attracts a higher fee! they didn't display the prices of any of these flavours so it was a bit of a shock when i went to pay! potentially they had the price somewhere but it must have been well hidden cos even after sitting down and staring at their menu board i couldn't find the pricing anywhere!
this spot is moreso a takeaway shop but they do have some tables indoors and outdoors if you wish to have it there - the dining experience is nothing fancy
