I think you should read this review... First, I'd like to start by saying that I (perhaps arrogantly) consider myself an authority on all things pizza, obviously by self appointment. I could eat Pizza morning, noon, and night for months and be the happiest little fatty around (but I don't... For my health). Before reviewing Carmines, I'd like to preface this by saying that before ordering a pizza from anywhere, ask yourself, "what kind of pizza do I want? Neapolitana, Dominos, "Thick n Greasy" deliciousness like Varisty or Nikos? Or not? Etc." So if you order one thing when you want another, that's on you.
The review:
Carmines is more expensive than most places you'll find on your Skip the Dishes app, and for good reason. The quality of ingredients is absolutely amazing. We had the Pepperoni and the Capo. The O.G. (Pepperoni), as classic a pie as they come, was the most delicious pepperoni I've ever had. This is the pie by which a pizza joint lives and dies. The reason is simple, there are no flavours to hide behind, only quality ingredients and skill in the making of it - 10/10 Carmine's. The Capo, with it's taste of truffle, garlic, and mushroom, was nothing short of a flavour hurricane. You may think, ew, funghi on a pizza? What, a dozen chopped cremini shrooms? No, a veritable tornado of mushrooms and garlic descend upon the Capo and dance in symphony with the pecorino cheese.
The cook on the pizza was, in a word, perfection. A crunchy bite to it with a soft texture once your teeth sink passed. Let these flavours knock boots with your taste buds for a goooood long while. It's in your best interest.
The tell tale sign of an amazing dough or "crust"? We ordered delivery and the crust was not a bit soggy. Amazing form and structure to accompany bold and delicious flavours. Again, 10/10 on the dough. Ah the dough... What a beautiful thing this was. Unbeknownst to most average Nancy's, when they order a pie for Rand and the boys after their round of golf, the dough is the star of the show. We recently moved from the deep south to the north and we're eager to check out a new pizza place. Carmines is less than a 5 minute drive away and I must say...This pizza has definitely made the move worth it!
The pizza is a bit on The pricey side, but worth it. You can taste the quality ingredients. There is no other pizza like this in Calgary (that I know of).
Carmines pizza is a perfect blend artisan pizzas with its simple unique ingredients, mixed with the late night pizzas you hate to love (but not at all greasy).
What I love is that Carmines doesn't try too hard to be unique. I've tried some pizzas where the chef tries to be too out there and completely ruins the pizza experience.
Their pizzas satisfies all your pizza cravings with all the traditional flavours, but also has that unique ingredients that give you that twist you can't get anywhere else.
I am really struggling to explain Carmines pizza. They do a wonderful job at balancing the flavours. I'm just going to say go try it. You won't regret it.

Read moreI have given Carmines a couple of orders in the past month, my first experience was exceptional. I love NY style Pizza and find in YYC there isn't a great option and so when I stumbled upon Carmines I felt like I was given a gift from Zeus himself... our first experience was great, the OG and a Caprese salad... it was delicious. The 2nd experience I had was significantly less special, I had an awkward conversation with the person who took our call and when I showed up to pick up they were busy. IN fact they were so busy that the guy at the front was borderline rude to people showing up. I sympathize with the overwhelming nature of peak times, I really do but I also really appreciate a level of customer service. While most restaurants today would beg to be busy It felt like a burden asking to pay for my pizza. I don't believe you should ever feel like that when supporting a establishment. In the NW we are very fortunate to have a lot of options for great pizza, for the time being I will go back and explore some other options before giving Carmines another shot. Pizza was really good and so was the salad but it wasn't good enough that service...
