A great place to be if you are looking for an elevated dining experience. Prices are reasonable considering the chef’s skills and services we had. Just by tasting the first dish (amazing blood sausage with cabbage sauce), I know food here are just not “food”, a lot of thoughts are putting into combining ingredients, creating texture, and the use of interesting culinary skills to create the best/most thoughtful dishes. One of the best dining experience I have in Quebec (and I have been to many!). Kudos to the chef’s skills and the amazing servers that took care of us! Will come back again next time in Granby! ❤️

Good Atmosphere and good food This is a polish themed restaurant, though there appears to be some dishes that were adapted (such as a hamburger with a Polish flair). I had the Spazle and found it very good. I understand that the bar tender is known for his concoctions, though I didn't try them. The deserts have a bit of pizazz, too, with chocolate cream wraps made to look like cigars. The atmosphere is good. Importantly, it is one of the few restaurants open on Tuesdays.

The Bistro Kapzak definitely knows how to stand out. Whether it's its unique Polish and Quebec fusion cuisine, Chef Jason Kapzack's passion for cocktails and local produce or their conviviality, which is no longer to prove after the restaurant's 7th anniversary. As if it was not enough, the Chef offers, about once a month, a special menu pairing with a wine or spirits that is close to his heart. I had the chance to participate in the last evening chef à table when Jason concocted a 5 course menu paired with the wines of the piemontese house Pelissero. The previous editions honored the Macallan Scotches or the Tuscan wines from the Tunia estate. Pelissero is a claimed modernist when it comes to winemaking technique, the use of casks and barriques and style in its wines. Located in the district of Treiso,one of the four key barbaresco communes, the 38 hectares of Pelissero is divised between 5 vineyards : Vanotu, Tulin, Piani, Augenta and Munfrina. The production is concentrated between their Barbaresco, Barbera and Dolcetto, but they also make Freisa, Favorita and Moscato. Overall, the wines shows great balance but especially a sleek and elegant style. From the fruity Dolcetto to the perfumed Tulin Barbaresco made from rocky soils, the wines all have the same dedicated delicacy. The pairings were elaborated and explained by Jason himself, always with a precision in his descriptions. A delicious duck tartare to start with a homemade cocktail. The second service, a veal tenderloin with cherries and plum puree worked particularly well with the Dolcetto d'Alba, Munfrina 2016. Then, a Polish version of a cheese and mushroom risotto surprised us all by its quality and delicious flavors, followed by a simple roast lamb and barbaresco Nebiula and Tulin. The great meal ended with the cheesecake with crispy dark chocolate and tiramisu. A true delight. Did you know that most of the vegetables used at Bistro Kapzak come directly from the large and abundant vegetable garden of his parents? More than just local products, they are family products and an opportunity that few craftspeople are lucky...

I went at lunchtime today and did not have the same experience as the other reviews. I had high hopes due to reviews and recommendations, but it ended up being very underwhelming:

  1. Service, while nice enough, was ridiculously slow. There were maybe 7 other diners in the entire restaurant, and I had to wait 20 minutes for the waiter to take my order, and 15 from the time I asked for the cheque to when I could finally pay. He'd disappear in the kitchen for 5-10 minutes at a time.
  2. I ordered a beer, which never arrived. I double-checked to make sure I wasn't charged for it.
  3. 15 minutes after ordering, the waiter returned and said they didn't have the vegetarian sausage after all. When I asked if they had any other vegetarian meals, he offered the fish (!). Last time I checked, fish don't grow on trees.
  4. He offered to bring me the rest of my plate but without the sausage. I asked if he would discount it since, you know, half of it was missing. He said he couldn't do that, but would bring a bigger portion.
  5. When my plate came, it was not a bigger portion. There was risotto and vegetables, which were just OK, and an empty space where the sausage would have been.

I don't know if the service, kitchen and attitude are completely transformed at dinner vs lunch, but this was a pretty terrible lunch experience. There are half a dozen better places for lunch within walking distance, go there. I'd give one star, but the extra star is because the place is nice, and they leave you with a whole carafe of water, not just refill your glass. Good thing too, or you'd probably wait ages for...

Mon souper d’anniversaire pour mes 25 ans a été un désastre. Nous sommes partis de Drummondville, puis Ulverton pour venir souper chez vous à Granby. Nous sommes arrivés à 17 h 39 puisque j’ai déposé ma belle-mère pour qu’elle rentre et avise que nous étions présents le temps de me stationner. Dans ma note de réservation, j’ai pris le temps d’écrire, par respect pour l’établissement, que si nous arrivions en retard, c’était dû la à route pour nous rendre . À notre grand bonheur, le restaurant était si vide avec leurs 2 ou 3 couples que c’était pratiquement écho à notre arrivée. Le délai pour recevoir nos consommations a été long ainsi que nos entrées à la limite de l’acceptable. Mon entrée était si petite que c’était une seule bouchée et manquait cruellement d’assaisonnement. Aucun sel ou poivre accessible à notre table. Aussi, le boudin de mon père était passé au four crématoire. Nous avons demandé à notre serveuse si nous allions bientôt recevoir nos plats après un délai déjà trop long. On nous a mentionné que c’était parce que le restaurant était plein, mais quand nous sommes arrivés nous étions maximum 3 tables de deux. Ensuite, sa défense était qu’ils servaient plus vite les gens qui avaient un spectacle à 8 h, mais nous sommes arrivés minimum une heure avant eux. Elle n’est jamais revenue nous voir après cette question tout à fait légitime. Elle allait à toutes les tables sauf la nôtre et plusieurs tables arrivées après nous ont été servies et étaient à la moitié de leur repas et n’avaient visiblement pas de spectacle puisqu’ils étaient encore à boire et discuter lors de notre départ. Même si c’est fort dommage selon moi de manger du pain en attendant un repas, je pense que l’on aurait mangé une miche entière tellement nous étions affamés, mais bien entendu, il n’y avait rien de tel à nous offrir. L’hôtesse a eu l’amabilité de nous demander si on désirait plus d’eau. Nous lui avons mentionné qu’à 20 h, nous quitterions pour souper ailleurs. Une minute plus tard, une serveuse est arrivée avec une attitude hautaine et passive-agressive qu’elle maîtrisait à la perfection pour nous offrir deux consommations. Mon père et sa conjointe ne boivent pas et c’était inacceptable de ne pas nous offrir au minimum nos entrées ou notre repas. Elle a roulé ses yeux deux fois quand nous avons calmement dit qu’il était 19 h 56 et qu’à 20 h nous serions partis. Nous n’avions pas besoin d’un supplément d’alcool, on se sentait physiquement mal d’avoir si faim alors une consommation de plus n’y changerait rien ou serait bien pire. Sa réponse en disait long sur le temps qu’il nous resterait à attendre encore. À 20 h, on se lève et même après avoir moindrement culpabilisés pour notre serveuse fantôme de quitter notre table, nous avons ATTENDUS encore pour payer la moitié du peu que nous avions reçu et c’était plus que de bonne foi. Nous sommes allés manger ailleurs et je peux vous dire une chose … je vais me rappeler de ne pas vous conseiller à qui que ce soit. En gros, de 17 h 40 à 8 h, mon anniversaire était désastreux et nous sommes restés avec un goût bien plus qu’amer concernant...
