I've been seeing Kibo pop up many new locations within the last year so we decided to give this spot a try since dine-in was also an option. It's not very big, about five tables for 4 people, as they primarily focus on takeout.
Parking wasn't hard to find as there's a free lot for the plaza.
We were greeted upon entering and offered to choose a table for ourselves. Each table has a bench side with chairs facing and were quite comfortable. The ambiance is nice with a minimalistic design and nice decorative details. We were offered cups with water, as well as menus upon sitting. Our server explained that there was a main menu, a drink menu, as well as a pamphlet with platter options as well. I actually really liked their menu design, since there were photos for each type of roll.
Our table of four ended up ordering their: Squid karage: these were in "fries" form rather than your typical rings like calamari, very good portion! It also came with a dipping sauce that was very tasty. Vegetable tempura gyoza: these came out piping hot and I loved the way they battered them. Maki and sushi platter A (42 pcs): beautiful presentation and overall, very fresh and good quality. Some maki like the California roll fell apart easily, but otherwise, no complaints. My favorite were the spicy salmon rolls which were actually spicy and the crunch in them was very nice. Salmon & avocado sushi pizza: I love how flavorful sushi pizza is and the crunch is amazing!

I ordered from Kibo Sushi (Toronto) and was immediately impressed by the exceptional presentation and thoughtful packaging. Everything looked beautiful, vibrant, and carefully arranged. The wasabi was high quality, and they included a generous amount of ginger. The lime wedges were a nice, refreshing touch, something not all sushi places provide.
However, I do believe the packaging could be improved slightly by including a small soy sauce container. It felt like something was missing.
Now to the most important part: the sashimi. While it looked great at first glance, the tuna, my favorite, had an unpleasant smell that raised concerns about freshness. The same issue was present with the whitefish, and some of the edges of the sashimi seemed freezer-burned or fridge-dried. Unfortunately, most of it didn’t smell or taste fresh, which was very disappointing.
That said, I truly believe Kibo has something special going on. Their attention to detail, branding, and presentation are excellent, and I can see why they have good ratings on Google. I’ll likely give them another try in the future, perhaps with a different selection.

Food : My friend and I ordered the Kibo signature as well as the premium sashimi plate. The roles were neatly presented and they were so delicious. It was a good portion to share with two people. I highly recommend the Kibo signature as the sashimi and scallops are torched which adds extra flavour. Sashimi was nice and cold (tasted fresh).
Service : The server was nice and was extremely attentive. Our waters were quickly refilled and we also received a refill on miso soup with no extra charge. It was great service overall.
Critique : We sat near the back of the restaurant and theres a wall placement put up( separating the tables from where the servers punch in order) and I think it would be better to remove it as it was hard to get the server's attention since it was blocking the view.
