We have ordered a set manual including 7 courses at a cost of 100 dollars per person. The food were great. The appetizers were sea urchin, the beans, the razor clams, duck heart with foie gra, main dishes were the arctic cha and sweetbreads, then a dessert . All the foods were fresh and tasty, accompanying side dishes were great , the sauce can bring out the flavour of the food without covering it. The Arctic cha got a crispy skin and tender meat texture. The sea urchin got a very sweet taste due to the chicken broth. The bread accompanying the duck heart was just baked before serving and it was fuming when we ate it . The bean was crunchy. The razor clam was a bit small in portions. The sweetbread was very tender and juicy and unlike other restaurants which just deep fried it . The weakest dish was the desert , it was a deep fried bread with chocolate inside accompanying by some plum bits. It could be further improved but I accepted it . In all I tried more than ten restaurants in Quebec city and Montreal in the past seven days, Chez Jean Paul was the best. Not to mention the waitress was very nice introducing us all the different dishes with candid recommendations. Also, they changed plates and utensils for every dishes which other restaurants lacking. We took the entire service of 7-9 dishes, and I can tell we the portions are quite generous. I was happy and full at the end. And I do have to highlight this because having been to Mastard only a month earlier, where I ate the same number of dishes and I was still hungry at the end, dish size is important

Chez Jean Paul was the first restaurant on our visit to Montreal that exceeded our expectations by far. Both my partner and I are quite critical and there was several courses and pairings which we deemed flawless.
The sardine Dill chicarones were laughably good. I couldn't stop smiling when I ate this dish. The eggplant pana cotta and pairing was perfect. Ive never had better sweet breads in my life. I could go through the whole menu and give almost identical feedback- 11/10
Our server/somm was so friendly and excited about the menu. That speaks volumes! When the service team is educated and excited, it just elevates the entire experience. It's clear that the comrodory and morale amongst the FOH and BOH team is shared.
