Had an exceptional experience here recently. The combinations for their 8 pizzas were unique, but still down to earth. They have the feeling of a "gourmet" pizza, but at a surprisingly low price point of around $24 per za. The Irish pizza with added caviar was something I was not expecting to hit my taste buds the way it did - truly excellent. Of the handful I did try, all were something I would go back for (shoutout to the Forest Floor white sauce mushroom pizza too). I also love that they have seasoned warmed olives as one of their apps as well.
Drink list is varied with a nice selection of cocktails, mocktails, mostly Italian wines, and a few beers/cider as well. Not to mention the can do espresso as well. They have an amaro & steamed milk nightcap that was possibly the most peculiar use of amaro I have tried - and it was excellent.
The atmosphere was enticing as well - you can smell the freshly cooked dough as you walk by the place. When you do step inside, it felt cozy and clean. Feels like it fits into the new eddy neighbourhood as well.
It seems that Linden using a traditional Italian biga dough which was light in texture with a complex flavour. But, more importantly for me, that type of pre-fermentation dough is one of the few I can eat that does not aggravate my particular mild intolerance to gluten. Read moreGreat attention to detail with all the ingredients that go into their pizza. Pizza is really well balanced and doesn't have that excessive grease factor. For example, the Spicy Nonna has lemon cream, which elevates it to next level, sweet green peppers and a tiny bit of spiciness, all perfectly balanced.
The crust is special, and, yes, it does show that they worked hard on the recipe. I don't normally go for dips, but their garlic dip is just perfect in texture ( light) and goes so well with it. Better than any other pizza crust in Ottawa ( imo) and one of the best I've tried in general.
Also, really great cocktails and wine list to pair with your pizza.
And finally, the place itself is super cozy (love all the orange colored design and the linden flower references), and the staff are lovely.
I would consider this a gourmet pizza place but still very homey and cozy....

Which complemented the pizza, that in my experience was cooked perfectly, and most importantly seasoned. The desserts, thoughtful and delicious. The Amaro and milk shouldn’t be missed. The cocktails, perfect. The wine list, balanced and intentional. The space is neat and energetic. The staff are generous and considerate.
