Coyote is good, I’d give them 3 and a half stars. The food is pretty authentic but lacks in seasoning, I think they cater to a less adventurous palette. (Forgivable since it’s Tillsonburg after all but it could easily be better.) That is, there is no cumin, no cilantro and less spice overall.
We got chips and salsa to start. Both are house made which is nice. I thought the salsa was quite tasty but needed cilantro. My companion found it too tomatoey, my mum found it too spicy, you can’t please everyone.
I had tacos which are only offered with ground beef, I needed to put some of that tomatoey not too spicy salsa on them for a little flavour. They do offer chicken and pulled beef on the burrito (which my companion had without meat - just beans, he said the same about seasonings). Chicken and pulled beef are also offered on the quesadilla (which my mum had with ground beef.) She enjoyed it and I know she curses the franchise options for their lack of ingredients. I would get the tacos again and would ask for the pulled beef even if there was an up charge. They ought to offer fish tacos and al pastor (which is very traditional Mexican with pulled pork and pineapple).
The menu is nicely limited, like they don’t try to do shrimp Alfredo or anything ridiculous. The portions are good value. The service is good. The interior is low brow, but acceptable and very clean.
All in all it’s likely the best Mexican food on town. I have much lower impressions of the franchise restaurants in town.
UPDATE: Took another trip to The Coyote. Food was more flavourful as if seasonings and spices were amped up just for me. ;)

We were greeted upon arrival, promptly given a menu along with the daily special. It was hard to figure out exactly what I wanted as there were so many delicious options to choose from.
Once our order was taken, drinks were once again promptly brought out and our food order was not far behind. I was blown away by how quick and friendly their service was.
I ordered the enchiladas, as you can see in the photo, which were absolutely delicious. The portions were exceptional, tasty and visually appealing.
I would 100% recommend to anyone who is craving an authentic Mexican meal to check this place out. Not only is their service and food top notch but their establishment is clean...

Bacon was pre cooked and tough like beef jerky, eggs where fine Rye toast was very small and cold.The regular toast was like it was dollar store bread, oldand cold. Almost 40 bucks for 3 breakfasts this morning. What a joke. Word of advice to this place. When your restaurant is empty or close to empty and customers come in. Don't feed them COLD pre cooked bacon from the day before. COOK FRESH HOT BACON.EVERY THING SHOULD BE FRESHLY MADE.
