It was our first time to eat at Hitori and it was the best decision ever! Lol. ;) The place when we came was quiet as it was after peak lunch hours already. We were seated originally on the left side as soon as you enter but we requested to try the cubicle style seating on the right side and the server was happy to accommodate our request. The service was fantastic! We were served with hot tea as we got seated and our orders came pretty quickly. We ordered the teriyaki dishes and I had Salmon Teriyaki while my husband got the Beef Teriyaki. We both were very satisfied with our orders but for me personally, i loved how fresh the salmons tasted. You can tell the freshness of it because it melts in your mouth and just really good quality. The teriyaki sauce tasted really good as well, it’s not overly sour and not too salty. For me, this by far is the best Salmon Teriyaki I have ever had. Read moreWe visited Hitori on our first night in BC after moving here and were highly impressed. Over the next few months, we visited many other sushi restaurants in the area and as far as the centre of Vancouver - and none of them better (or come close) to Hitori.
The staff are super friendly and kind and you can tell that they really care not only for the presentation of their food, but they also work hard to find the best possible ingredients. Everything we have eaten there is wonderful, but we would recommend their speciality rolls as well as sashimi and Aburi dishes. Im getting hungry just writing this.

I was impressed as i did not have to request it. Clean, bright and the individual booths make it a great place to dine in as well during the pandemic.
