Stopped off at Le Buck on our way to Quebec City. The restaurant had cool jazz playing in the background. A blend of people in suits and casual attire. We ordered the duck with fois gras and the bison as mains. The duck was grilled perfectly with a nice crisp on the outside. Mixed with the selection of vegetables around it made the entire dish very fresh and true to the “farm to table” aspect. The fois gras was the best part of it all. It packed a punch of flavour with a very soft texture that was pleasant all throughout. The bison dish was complimented well with chimichurri and was cooked medium rare. The palenta was the highlight of the dish in my opinion. It was smooth, rich and flavourful. Accompanied with vegetables, it reminded me of the Mandolorin. The highlight was to be on the main character, but grogu (baby yoda) stole the show. Desserts - we got the strawberry and the chocolate. I’m a big coffee fan so I thought I’d enjoy the chocolate/coffee dessert more… the strawberrry dish was packed was flavour, texture, and a lot more aesthetic.

If you visit, you must sit in the back patio, it’s a hidden gem that truly reveals the restaurant’s charm. That said, the indoor space has its own unique beauty and character, making either choice a win. A place that delivers on taste, vibe, and setting. Le Buck is a destination worth seeking out.

Our server spent time with us going over the wine list to make sure we had the perfect pairings, and explained the menu in great detail. We ordered family style (steak frites, salads, fresh vegetables, arctic char, cheesecake) and everything blew us away. We had a lovely time on the patio on a perfect summer night, and I wouldn’t hesitate to go back. The atmosphere alone is worth the visit, but this was a world class meal. I'd definitely repeat.

Parlons tout d'abord du positif ! Le cadre ! Endroit qui se situe dans le centre de Trois rivieres ! Le restaurant se trouve dans une magnifique maison en bois. La salle est vraiment belle, le bois donne se côté chaleureux qui nous invite à vouloir passer une merveilleuse soirée en compagnie de nos amis à boire une bonne bière ou un bon alcool ! La terrasse n'est pas en reste... considéré comme une des plus belles de TR, je vous conseille de réserver pour pouvoir en profiter ! Comme dans beaucoup de restaurant du Québec l'accueil est très agréable même si je reviendrai sur l'organisation du service dans ce restaurant car pour moi c'est une grande première de voir ça !

Parlons des choses importantes ! La nourriture ! Le buck est ce genre de restaurant qui se dit proposer de la gastronomie ! Ce mot si important et qu'il faut savoir respecter ! Pour moi le chef doit savoir respecter un nombre de chose incalculable ! Nous sommes en fasse d'un professionnel qui doit connaître ses produits, maîtriser les découpes des légumes, de la viandes, la maîtrise du feu... des techniques que seul un vrai chef ayant une certaine connaissance et expérience peut effectuer ! Nous ne sommes pas dans la cuisine de Monsieur tout le monde ! Finalement je suis tout simplement déçu une seconde fois ...

Premièrement le buck connaît des produits et choisis ces producteurs ce qui est une chose responsable et digne d'un restaurant gastronomique ! Mais je dois dire que ça s'arrête là ! Les premières entrées à arriver ce sont les tomates du marché de Nicolet et le feuilleté de champignon ! Une grande satisfaction pour le feuilleté de champignon, un plat généreux qui explose en goût. C'est à la fois simple mais on aime les goûts prononcé, l'assaisonnement pas trop salé qui permet au champignon de se dévoiler ! Puis les tomates du marché ! Tout simplement un plat qui ne devrait pas figurer sur un menu d'un restaurant gastronomique ! Pour 12 dollars vous avez 3 rondelles de tomates non BIO avec un petit morceau de mozzarella ! La tomate est bonne mais vraiment pas exceptionnel en goût ! Aucune créativité, aucune recherche ! C'est juste impassable qu'un restaurant qui se dit gastronomique peut servir cela ! C'est le plat que je présente à la famille le dimanche !

Après nous avons les plats ! Burger de cerf, bavette de bœuf à la bière et poulet de Cornouaille ! Sur le papier cela semble vraiment excellent :) Mais la réalité est toute autre !!!! Le poulet était le meilleure plat des trois! Je dois bien l'avouer je mange rarement d'aussi bon morceau de poulet ! Il était tendre ! Les légumes croustillant ! Un vrai délice, si la carte ne change pas je reprendrai sans doute ce plat tellement il m'a convaincu :) Pour le burger de cerf, la viande était excellente mais la viande était trop cuite ! Elle explose en gout mais aurait mérité d'être saignante ! Pour le bœuf, étrangement on m'a dit que je devais absolument le manger médium et pas saignant, c'est comme ça que le chef le conseil ! Parce qu'il utilise une cuisson sous vide !! J'ai pas vraiment compris l'explication donné par la serveuse car même en cuisson sous vide on peut faire du saignant puis faire un aller retour à la poêle ! Alors la je n'ai pas vraiment compris ! La cuisson était donc très médium et gâchais le goût de la viande ! Une vrai déception pour moi qui voulait une viande goûteuse !! En plus la viande avait cette mâche étrange que je retrouve souvent au Québec et que je n'arrive pas encore à expliquer ... si vous comprenez ce que je veux dire et si vous avez l réponse je veux bien savoir :) ! Peut être que cela vient que la viande soit souvent attendris mécaniquement !

L'établissement nous a offert un petit whiskey québécois pour se faire pardonner des erreurs sur les cuissons ! Ce qui était très sympa...
