Huangfan'er — Restaurant in Hangzhou City

항저우에 도착하니 오후 17시라 저녁시간이 되었고  서호 근처의 가오인 미식 거리(高銀 美食 街)의 맛집으로 소문난 레스토랑 황판얼 (皇飯兒,HUANG FAN ER RESTAURANT)로 빨려 들어 갑니다. 항저우는 어미지향(魚米之鄕) 이라는 말대로 강과 바다의 풍부한 해산물과 풍요로운 농토에서 자란 쌀이  뒷받침되어 농수산업이 크게 발전하여 상당한 부를 축적했고 부는 음식문화로 귀결되어 고급스러운 미식으로 발전했습니다. 생거 쑤저우와 항저우 사후 유저우”라는 말이 있듯이 그만큼 이 곳이 살기 좋은 고을임에 틀림없어 보입니다. 항저우 여행객은 누구나 서호(西湖) 를 찾게 된다.  서호의 동문 정면에 허팡가(河坊街)가 있는데 이 길을 따라 800여m를 가면 허팡가 보행자 거리가 나온다. 이 보행자 거리와 평행한 북쪽 길이 가오인 미식 거리다. 가오인 미식거리의  간판에 건륭어제라고 쓰여진 황판얼(皇飯兒 酒楼:杭州市高银街53-57号) 이란 식당이 있다. 청나라 6대 건륭제가 강남 순행을 갔을 때 하루는 평복을 입고 혼자서 허팡가 남쪽의 야트막한 우산에 올라 첸탕강과 서호를 바라보다 갑자기 비를 만났다. 건륭제는 근처 민가의 허름한 처마 밑에서 비를 피하다가 배가 고파 그 집 문을 열고 들어가 한 끼를 청했다. 집주인 왕씨는 이 낯선 여행객이 황제일 것이라고는 생각지도 못했다. 아무튼 가난한 집이라 부엌에 있는 것이라고는 생선 대가리 반 토막과 두부 한 모였다. 여기에 두반장을 넣고 자글자글 끓여서 내왔다. 춥고 배고팠던 건륭제는 아주 맛있게 먹고 은자로 밥값을 치렀다. 건륭제는 자금성에 돌아와서도 그 맛이 생각나 어선방(禦膳房)에 몇 번이나 주문을 했으나 당연히 그때 먹었던 맛은 아니었다. 건륭제는 다음 순행에서 그 집을 다시 찾아 그때 그 요리를 청했다. 왕씨는 황제를 위해 정성껏 음식을 준비했다. 건륭제는 음식값으로 은자 이십량을 내면서 황판얼이란 세 자를 친필로 하사했고 왕씨는 황판얼 왕룬싱(皇飯兒 王潤興) 이라는 식당을 열었다. 황제 마케팅은 대성공을 이루었고  두부를 넣은 생선 대가리 요리는 이 식당의 대표적인 음식이자 항저우의 대표적인 음식으로 발전했다. 보행자 거리에 있는 왕룬싱 허팡가점은 1934년 문을 열었으니 이것도 90년이 넘은 식당이다. 나는 이 식당에서 두부와 생선 머리에 장을 넣고 요리한 첸룽위터우(乾隆魚頭)와 연뿌리에 찹살을 넣은 구이화눠미어우,서호의 민물 생선으로 만든 시후취위(西湖醋魚),두부 버섯 잣 참외씨 완두콩 고기등이 어우러진 바바오더우푸 (八寶豆腐),맛살 튀김 요리인 황페이쥐청쯔 등을 주문했다. 첸룽위터우의 깊은 맛이 최고였다. 찹쌀밥으로 구멍을 채운 연근도 훌륭하고 맛살을 튀겨 만든 요리도 훌륭했다. 항저우의 서호 주변에서 식사를 하게된다면 가오인 미식 거리의 식당들은 어디를 가든 맛과 품질이 보장되어 있으니 어느 식당이든 문을 열고 들어가면 결코 후회하지 않을 것이다. 황판얼(皇飯兒) 최고의 맛집 입니다.엄지척! 별 다섯 입니다. ☆☆☆☆☆ When we arrived in Hangzhou, it was 5pm, so it was dinner time. We were sucked into Huang Fan Er (皇飯兒, HUANG FAN ER RESTAURANT), a famous restaurant in Gaoyin Food Street (高銀 美食 街) near West Lake. In front of the East Gate of the West Lake is Hefang Street (河坊街). If you walk about 800 meters along this street, you will reach Hefang Street Pedestrian Street. The northern street parallel to this pedestrian street is Gaoyin Food Street. There is a restaurant called Huangfan'er (皇飯兒 酒楼: 53-57 Gaoyin Street, Hangzhou City) with the signboard of Emperor Qianlong on Gaoyin Food Street. One day, when the 6th Emperor of the Qing Dynasty, Emperor Qianlong, went on a tour of the south of the Yangtze River, he was alone in his plain clothes and climbed up a short umbrella on the south of Hefang Street, looking at the Qiantang River and West Lake. Suddenly, it started to rain. Emperor Qianlong took shelter under the shabby eaves of a nearby house, and when he was hungry, he opened the door and went in to ask for a meal. The owner of the house, Mr. Wang, could not have guessed that this strange traveler was the emperor. Anyway, because the house was poor, all they had in the kitchen was half a fish head and a piece of tofu. Here, they put in some doubanjang and boiled it until it was simmering. Emperor Qianlong, who was cold and hungry, ate it very deliciously and paid the price with silver. Emperor Qianlong remembered the taste even after returning to the Forbidden City, so he ordered it from the Yuxianbang (禦膳房) several times, but of course, it was not the same taste as that time. Emperor Qianlong visited the restaurant again on his next tour and asked for the same dish. The Wang family prepared the food for the emperor with great care. 皇飯兒，意旨皇帝吃飯兒的地方。這皇帝，就是清朝乾隆。

相傳，乾隆帶了太監到杭州遊玩。遇到大雨，在王順興民宅家躲雨，躲到肚子咕咕叫，便請求主人弄點飯菜。

王順興把吃剩的半個魚頭和一塊嫩豆腐放在一起，撒點蔥花、薑末、老酒，放點豆瓣醬煮了煮，外加兩碗鍋巴飯，就端出來。乾隆饑不擇食，吃得津津有味。

回京後，叫禦廚也燒魚頭豆腐給他吃，味道都不對。乾隆再次到杭州時，便到王順興家要吃魚頭豆腐，同時賞錢叫他開飯店，專燒魚頭豆腐及杭州菜，以便他來時好吃飯。

王順興請乾隆題店名，便寫了“皇飯兒”。
