認識我的朋友也知道我很喜歡吃魚,好友得知有餐廳推出了一系列的石斑魚的菜式,即時相約我去嘆了場很特別的全魚宴。
地點就在沙田麗豪酒店二樓的富豪坊,這間富豪坊我是首次到訪但很有熟悉的感覺,或許是裝潢上有點像姊妹店吧!
而今次的主角是亞洲水產於香港自家養殖場的綠洲藍鑽斑,此魚表皮呈若穩若現的瑰麗藍色,牠是由亞洲水產養殖的石斑魚又稱籃瓜子斑,而綠洲藍鑽斑是從澳洲凱恩斯孵化場,經自然排卵法孵化魚苗模擬自然的交配環境,如月亮盈虧和水溫排卵時不會損害親魚,廠房使用室內循環水系統來處理水質,絕不帶有病源體魚苗是無特定病源在養殖期間亦較少生病和吃藥,所以魚苗的健康會很有保障即是食用人仕可以放心品嚐。
介紹完這條健康又美麗的藍鑽斑後,是時候享用由行政副總廚楊嘉河師傅炮製的藍鑽斑盛宴,打頭陣是三款風味前菜包括是茶香燻素鵝、桂花蜜餞藍鑽斑及金沙小河蝦。
先品嚐這件色香味俱全的香燻素鵝,帶上幽幽的煙燻香氣吃下層次豐富口味清麗怡人。
第二件是邪惡又可口的金沙小河蝦,甘香的鹹蛋黃化身黃金戰衣披在雪白的河蝦上,加上爽口的蝦肉吃下甘鮮迷人。
到是日主角藍鑽斑出場楊師傅以桂花蜜餞來烹調這水中藍鑽,魚球以南乳醃製過後再炸至金黃脆口,混上清香甜美的桂花蜜餞鹹甜交錯超美味。
