I have been frequenting "Ramen to Biiru" since they opened their first restaurant in Nørrebro years back. I even joined in when they opened in Vesterbro, Østerbro and Frederiksberg, and it was good. But...
The last two years or so the quality has clearly fallen, and so has the frequency of my visits. Today I decided to give them another chance, this time in Frederiksber making the safe choice of a Tonkotsu Ramen.
Unfortunately the broth was rather weak lacking taste and umami, the ramen uncharacteristically contained sour or fermented cabbage disurbing the taste, and the meat was of low quality.

The broth was overly seasoned, and the minced meat was so dark it looked more like beef than pork, which threw off the balance of the dish. While the noodles were cooked well and the toppings were fresh, the flavor of the meat overwhelmed the other elements. The ramen is on the pricier side, which makes consistency even more important. The lady server was not friendly at all — the way she carried herself and the way she talked to me when I asked her a question.
