We had an unfortunately very unpleasant service experience at Matsuhisa. We had a 9pm booking (they only have 2 sittings), weren’t given menus, water or offered drinks for at least 40 minutes after our arrival. We were told the omakase wouldn’t be available for groups of 6 after 9pm (no one mentioned this to me when booking). The food all came out incredibly quickly (within 30 minutes) and our wine and water was not topped up throughout the service, nor were the staff available to ask if we wanted anything additional. To top it off there was an additional €190 bottle of wine on our bill which we didn’t drink or order.

HOWEVER. They literally served us the worst sushi rice I have ever had. It was unseasoned (I dont think they used any vinegar) and mushy. Its not an exageration to say that I have never had worse sushi rice, and I'm including grocery store sushi in this.
It makes no sense. I'm not gonna knock them for having mediocre fish in the Alps, but rice ships well, and there is no excuse for a Nobu restaurant serving what they served. This isn't some stylistic choice either, I've been to Nobu NYC (back when it was cool) and Matsuhisa Aspen, and they didn't have these issues.
