The foie gras appetiser was sublime, melt in the mouth deliciousness. I’m grateful to Grusson as this dish has shown me that fois gras needn’t be the huge fatty lump of raw duck liver that I consumed some years ago as part of a degustation menu at Singapore Raffles.
