Today is a day trip to Annecy. It was also the first time for our family of three to try ramen from this restaurant. Me and my husband had ordered shrimps ramen. The boss also filled the ramen with some pink fish fillets and four pieces of shrimps. The pink shrimps are coated with some sauce to brighten up the presentation which taste quite good. Some shredded carrots, rocket leaves and bean sprouts, and a soft-boiled egg with noodles. Maybe the owner of Yatta Ramen wants to cater to the tastes of local people. The soup base of shrimp ramen is fragrant with coconut milk.
You can see that the owner of the restaurant is really willing to use the right quantity of the food ingredients to serve the customer. The Char Sui ramen ordered by my son is the most classic ramen. Knowing how to make tonkotsu soup base is the most basic skill in a Japanese restaurant.I remember once eating at a so-called the most popular ramen restaurant in the Japan Town in San Francisco. It turns out that the soup base of tonkotsu ramen has a very strong pork flavor. And it tastes very weird. I don’t know if it’s to cater to local tastes.
But the soup base in Yatta Ramen’s Char Siu Ramen has just the right flavor. I should say the taste is normal. The ramen is topped with a very thick slice of barbecued pork, bamboo shoot slices, shredded ginger, pickled radish slices, seaweed , and a soft-boiled egg.
After finishing the ramen, when we were paying the bill, I had noticed a box that’s full of daifuku placed next to the cashier. That’s looking good and fresh. They have dark chocolate filling, chocolate peanut filling, mango coconut filling, and red bean filling. My son and I each had ordered a daifuku. Mango coconut filling, and red bean filling. I have always been very resistant to daifuku made by the japanese people, because it tastes super sweet. And the daifuku made by Yatta Ramen is not too sweet at all.

The shrimp ramen which was labeled as “spicy” had absolutely no spice and the broth almost had a sweet creamy flavor. There was barely any soup in the ramen and it was lukewarm. I couldn’t even finish it. They probably modified the recipes to suit the French palette but let’s be honest, this is not ramen. When I asked for the spicy paste in an attempt to salvage the dish, they brought me gochujang (a Korean spicy paste) which is not something you use for ramen ever. Read moreAs a Japanese I was so excited to find this ramen shop when visiting Annecy. The staffs were really nice and I waited for no more than 5 minutes to receive my ramen chashu. At first it looked very small but probably because the soup is miso-based I was so full after eating 80% of it. It was interesting that they added two types of pickles and sesame in ramen which I didn’t mind. The chashu and menma were very good (the chashu is really big!). I was recommended to add a boiled egg so I did and it was half boiled, which was great. I was so full that I couldn’t add anymore dishes but I would love to come back. Great...
