Smart place, friendly staff and the ramen is delicious. It has clearly been constructed with care, the ingredients are good and the broth is excellent. It is a chicken broth, which is unusual in my experience, particularly when paired with the traditional pork belly. I consider pork broth ramen the standard and while I've seen other broths offered, they are usually an afterthought on the menu.
In London, this would be a 4 star place for me, despite the high quality. In Bordeaux, one has to be a bit more generous with Asian food; at least this is not the dreaded French Asian. I would be more wholehearted in my praise if they would add some more elements of a traditonal ramen:
The aforementioned pork broth as an option. A little pickled radish - important to have the acidity I think. Ground sesame seeds (or put grinders on the tables as is common). Chilli flakes grinder on the tables. A soft-boiled egg as standard. At €14.50 (and at lunchtime), this seems like a reasonable inclusion.
