A great experience! The chef actually has a "food philosophie" where he sees for as a way to balance life, season and body. In a way, Chinese medicine made of food. If you ask him, he'll be happy to tell you more about this philosophy. It was fascinating to listen to him and he was very generous in his explanations. He goes to great lengths to prepare his food. For example, it takes 4 days to get the beef entree ready. 2 days to prepare, 1 day with a certain style of cooking and then another on the day he'll serve it. And I could not detect the taste of MSG. I didn't ask if he used it, but when I spoke with him, he explained how he was aiming at getting the taste of food as natural as if you'd get it in a village or so.
The menu is small, 4 starters and 4 entrees, including the "plat du jour", starter and entree of the day, and only one dessert. Today I enjoyed some pork meatballs with ginger and spring onions rolled in rice and steamed on a marinated cabbage lead, then I got chicken with ginger and spring onion in caramel sauce, served with rice, and the steamed appel over a sesame caramel sauce. My friend got the Asian aubergine, the beef (which was to die for too). It was fresh, tasty, light and I feel really healthy and vibrant. I drank Oolong tea, brewed to perfection, smokey but not strong.

To be exact, it's on a par with Michelin star restaurants both here and in London and if you're lucky enough to go, and go with his choices, you will be rewarded with a gourmet meal, fabulous fusion of flavours and years of tradition adapted to a present palate. I've not had such an amazing and exquisite 'Chinese' taste experience in a very long time.
Plus, we each had 4 courses, amuse bouches, desert, good wines and remarkable tea, with dishes to sensitively explode your taste buds and... an exceptionally well matched port selection with desert at a price that reflects their love of their craft, and not purely for their personal financial reward, as their passion leads their purpose.
