Das Restaurant ist klein, charmant gestaltet, man sitzt bequem. Dezente Musik, wertiges Geschirr. Eine Seltenheit, es gibt Kerzenlicht. Parken ist in unmittelbarer Nähe möglich.

Die Dänen nennen es Hygge. Hygge steht für eine gemütliche, herzliche Atmosphäre, in der man das Gute des Lebens zusammen mit lieben Menschen genießt. Und genau das tut man hier. Restaurantleiter Maximilian Christoph ist ebenfalls "Hygge" 🇩🇰 😊, eine angenehme und zugewandte Persönlichkeit. Kompetent informierte er über Menü und Zutaten. Er hat eine kleine, durchaus feine Weinkarte zusammengestellt. Wir entschieden uns für eine Chardonnay-Reserve 2021 (Weingut Sander-Rheinhessen). Das gesamte Serviceteam war sehr freundlich, ebenso die Köche. Sie kamen an den Tisch, um Gerichte zu finalisieren und zu erklären. Dies war kurzweilig & bereitete den interessierten Essern (uns 😊) Freude.

Das gesamte Menü gefiel. Schmackhaftes selbstgebackenes Brot, eine leckere Butter (Shiso?/Liebstöckel). Die Amuse-Bouche, großartig. Geräucherter Joghurt, „Fischsuppe“ mit großer Tiefe (Augen zu, zack saß man am Hafen von Marseille), eine Art knuspriges Tartelette mit Eigelbcreme, Nussbutter und Nori-Alge. Zwei Gerichte innerhalb des Menüs gefielen besonders: „EN BLANC ET NOIR“ - Venere Risotto/Koji/Pastinake, war geschmacklich exzellent & genau wie ich es mag. Wenige Produkte, diese von hoher Qualität, perfekte Zubereitung, geschmacklich „voll auf die Zwölf 😊“. Davon hätten wir direkt einen zweiten Teller gemocht. Ebenso begeisterte das „aufwendigere“Gericht: „DER VERBORGENE GARTEN“ - Melanzani/Basilikum/Granatapfel/Shiitake. Eine Komposition, bei der man bei jedem Löffel genussvoll die Augen schoss, um sich so auf das „Gaumenglück“ einzulassen.

Fazit: Das Angebot an Speisen ist vornehmlich französisch inspiriert. Herr Fischer war u. a. einige Jahre bei Franz Keller tätig, keine schlechte Adresse, um französische Klassiker kennenzulernen. Das Menü in 6 – Gängen wird mit moderaten 130,00 € berechnet. Was soll man machen, der Lipper hat zwar Geld, gibt es aber nicht gerne „öffentlich“ aus. Detmold, definitiv kein einfacher Standort für ein Fine-Dining-Restaurant. Ich kann nur resümieren, selber schuld, wenn man dort nicht einkehrt. Es gibt im Umfeld einige Restaurants mit Stern. Warum das Porte Neuf bisher „leer“ ausgeht, ist ein Rätsel. Wir haben bei allen Mitbewerbern gespeist, das „unbesternte“ Port Neuf ist für uns die aktuelle Nr. 1 in der Region Ostwestfalen-Lippe. Dem Gault Millau ist das zumindest zwei Hauben wert, der Guide Michelin muss wohl erst aufwachen. Jeder, der ein wenig Fine-Dining-Affinität aufweist, wird hier zufrieden sein.
