I had a question about our main (What the "Praline" is made of) and the waitor could not answer it. I did not get an introduction to my main as all others, so I think it's eligible to ask what it is made of. > Dessert was ok but not as amazing as the main I can highly recommend anyone going there and try out the menu and hope that the menu will change more often

Such flavorful food! From delicious starters, to stunning mains and crowning glory desserts, the food they prepare here is totally recommendable and satisfying for all senses. Take your time to indulge in the flavors and textures, experience something new. This place enables you to do so. The dishes seem to be seasonal, and you can taste it in every bite. Besides delicious food, they also prepare (and home-ferment) delicious drinks that go well with the food. Again: new flavors await. The service is very friendly and attentive, provided by one person only while I was there. I dined by myself and felt very comfortable. A true recommendation!

They were also able to accommodate gluten free dishes. I would therefore highly recommend this vegan restaurant as value for money is great as well.

We had the New Year’s Eve Menu which consisted of 7 courses plus wine pairing. Overall, the experience was great! The service was very attentive and super friendly, the location cozy and comfortable, the food delicious! Some of the wines were really outstanding too and you could get free refills. They were also able to accommodate gluten free dishes. I would therefore highly recommend this vegan restaurant as value for money is great as well.

The flavours simply didn't deliver.

It's a nice enough place, and definitely promising. Nice people, great small surprises like roasted almonds presented creatively in a cup. We appreciate what they were trying to accomplish with their dishes but I've seen well-executed vegan menus, and this wasn't it.

We kicked off with the mushroom/onion appetizer. Balanced creamy starters, and they pair nicely with the bread. Yet the miso butter that came with the bread -as a separate side- was the first to miss a central note. Not enough in there to stand out. So much so that we salted it by hand. And the broccoli side dish lacked flavour, came cold, and could've been left out.

Next up, the mains. The sushi is fried. I'm okay with subverting expectations but only if you're confident that the surprise will be a positive one. It wasn't. The other main -the walnut balls- were too much and too little at the same time. They'd packed a world of lentils -way too much- and nuts into three (massive, to give credit where it's due) balls but were dry and flavourless. The base, a pumpkin spread, was the antagonist of the night. At its worst a pumpkin spread base should taste at least like pumpkin soup, and at its best, well... that's what makes a great chef. They'd show us what it can be. But surely not this. Too oddly-flavoured, almost chemical-tasting.

We didn't try the dessert after the surprisingly heavy dishes. Overall, the service was wonderful, the people and the atmosphere are nice, they're striving for something cool, but as they stand, these dishes still belong in the kitchen for some serious fine-tuning before they can surprise and entertain us the way they intend. Till then, Tonka unfortunately doesn't stand out amongst a recent crowd of wonderfully-creative vegan restaurants...

Das Tonka verfolgt einen spannenden Ansatz. Leider halten die Gerichte nicht mit.

Wir haben mehrfach im Tonka gegessen, weil wir die Idee toll finden, auf Gemüse und Pilze, statt auf Fleisch zu setzen, denn das ist oft bekömmlicher und kann genauso gut schmecken. Die Herausforderungen: Aroma und Textur. Bei beidem tut sich das Tonka schwer.

Bei all unseren Besuchen gab es einen Gang, der wirklich lecker war. Doch die andere Gerichte fielen im Vergleich dazu ab. Entweder wird versucht, mit Röstaromen aus dem Gemüse ein Geschmack herauszukitzeln - doch das schmeckt durchaus verbrannt (als hätte man es zu lange im Ofen gelassen oder nachträglich schnell abgeflammt). Oder man kombiniert fruchtige mit erdigen Aromen. Das ist besonders knifflig und geht mitunter schief.

Die Texturen sind sehr oft schlonzig. Ich erinnere mich an einen gebackenen Romanesco, der in einer Soße einfach ertränkt wurde. Mir tat dieses wunderschöne (fraktale) Gemüse einfach nur leid. Oder ein Blumenkohl, der in einem rosa stärkehaltigen Brei versenkt wurde. Das sieht einfach nicht schön aus. Und schmeckt dann auch nicht gut, weil die Aromen unharmonisch ineinanderlaufen (und oft zu säuerlich sind).

Die Optik der Gerichte ist generell schlecht, die Teller ungenau angerichtet. Die Speisen liegen entweder beliebig auf dem Teller (das war bei einem Pilzgericht so) oder verschmieren ineinander (oft bei Soßen oder Stampfgerichten). Man erkennt zumindest keine Idee, wie das Essen präsentiert werden soll. Zumindest sollte man die Hauptspeise nicht im Schlonz ertränken.

Uns ging es oft so, dass man einen Gang trotz, nicht wegen, der Optik gegessen hat. Leider setzt sich die Optik oft auch beim Essen fort: Es ist oft einfach nur breiig. Sehr gut für Menschen mit nachlassenden Bissfähigkeiten. Wir fühlen uns von den Texturen unterfordert. Ein paar Nüsse bringen keinen Crunch, sondern wirken völlig random. Warum nicht mal frittieren, etwas Knuspriges ausbacken? Gemüse hat hingegen oft zu viele Verbrennungen oder bittere Röstaromen.

Der Service ist freundlich und reißt die eine oder andere Schwäche des Essens heraus.

Dem Ambiente merkt man die Jahre an. Der gewollte Vintage-Charme hätte allerdings ein paar Modernisierungen gebraucht. Das Mobiliar ist in Teilen lieblos (bis auf eine kleine gemütliche Ecke). Und es müffelt.

Wir haben dem Tonka mehrere Chancen gegeben. Doch die negativen Eindrücke haben sich im Laufe der Zeit verfestigt. Schade, denn Lage und...
