Handwerk, Hannover » My visit: June 2025 » Total score: 4.8/5 – very good » Comment: I thought the food tasted very good and I would rate the level of the food as outstanding. I would particularly like to highlight the excellent main course with roebuck. I also found the taste of the wines very good and the level outstanding. Here I would like to highlight an outstanding Grauburgunder from Baden. The “Handwerk” completely fulfilled my very high expectations. Summary: - Food Quality: Overall very good; ~Wagyu was slightly chewy for grade 10, ~Duck - slightly poor cooking technique, insufficient resting time/pan temperature control (see photo, not bad, but the rare region lacked flavor), + otherwise nice diversity of textures and flavors - Service: Male Staff: Unfriendly, rushed, and dismissive. Female Staff: Professional and friendly, albeit slightly robotic in dish recitation, very attentive - Ambience: Good lighting and music, but overall lacks warmth by the staff, especially for a "Casual fine dining" - Staff Interaction: Minimal; no engagement from sous chef or head chef. - Handling of Reservation Error: Unprofessional response to birthday misunderstanding (unfriendly call hours before the confirmed reservation, followed by a detectable unfriendliness by waiter (male) and absence of any interaction with the kitchen. It's always a good insight into a restaurant how they handle minor errors/misunderstandings. - Overall Impression: Heartless atmosphere with evident classism, undermining the quality of the truly good food. In summary: Despite the high standard of the food, the overall impression was marred by a palpable sense of heartlessness and an air of unapologetic classism. The lack of sincere hospitality, coupled with the staff's annoyance by a reservation misunderstanding (marked reservation as birthday as this was a birthday gift), resulted in an experience that was, regrettably, more alienating than enjoyable. The price and food is indicative of a one star Michelin restaurant, the delivery and human element of the craftsmanship is a stain to the establishment. Dieses Restaurant hat Hannover gefehlt. Das „Handwerk“ haben wir in der Pre-Open-Phase besucht und haben ein reguläres, sowie ein vegetarisches Überraschungsmenü erhalten. Die Rezension bezieht sich also genau hierauf. Das „Handwerk“ ist zunächst ein kleines Restaurant mit sauber ausbalancierter Einrichtung im gehobenen Stil, doch nicht zwanghaft hochgestochen. Hier werden Gäste am Eingang abgeholt und geduzt. Das ist Programm, denn hier soll es gepflegt locker zugehen: Casual. Den Köchen kann man direkt bei der Arbeit zusehen, denn die Küche ist offen gestaltet – die Anrichte zeigt direkt zu den Tischen. Das sorgt nicht für Transparenz, sondern ebenso auch zur Nähe zum Konzept. Hier darf man noch dabei zusehen, wie feine Speisen von Hand kreiert werden. Der Service ist sehr aufmerksam aber nicht aufdringlich, erklärt fachkundig jeden Gang und sorgt für das Wohlfühlaroma. Die Speisen der Küche waren – an diesem Abend während es Pro-Openings – von ausgezeichneter Qualität. Hier spürt man mit jedem Bissen, dass da jemand am Werk ist, der mit Aromen umgehen, ja gar spielen kann. Alles sieht fantastisch aus und schmeckt auch genau so. Das „Handwerk“ ist ein gehobenes Restaurant im Casual-Style, also alles andere als Zwanghaft. Das ist eine richtig gute Kombination, die es wert, auch von Feinschmeckern außerhalb von Hannover aufgesucht zu werden. Noch zwei Anmerkungen zum Schluss: Die Toiletten sind (natürlich) sauber und mit der Wald-Wanddeko, den Holztüren und dem Vogelgezwitscher aus den Lautsprechern kein unangenehmer Ort. Und Parkplätze sind in den Abendstunden in diesem Stadtteil Mangelware. Entweder umkurvt man die Straßen ein wenig, oder reißt gleich mit der Bahn/Bus an. Wir kommen wieder.

Gerne haben wir die Gelegenheit genutzt, um mal wieder im ‚Handwerk‘ vorbeizuschauen. Die Küche hat uns nicht enttäuscht, sondern erneut mit eigenwilligen und einfallsreichen Kombinationen erfreut. Wer immer wieder auf so hohem Niveau innovativ ist, darf auch einmal etwas danebenliegen, so bei der gewagten Kombination von Erdbeeren und Erbsen, die durch ein recht süßes Erdbeereis doch sehr in den Dessertbereich abdriftete. Leider hat der selbstbewusst auftretende Service die tollen Küchenleistungen unterlaufen. Wir wollten bei schwül-warmem Gewitterwetter gerne im Innenbereich essen. Nein, da wäre nichts vorbereitet. Abgesehen davon, dass ein Zwangsaufenthalt auf der Terrasse generell nicht entgegenkommend ist, nahm der Abend einen ganz anderen Verlauf. Nach einiger Zeit wurden nämlich schon Instruktionen erteilt, wie und wohin die Gäste sich bei beginnendem Regen unter Mitnahme ihrer Getränke (usw.) ins Innere begeben sollten. Nachdem weiteren tapfer durchstandenen Kämpfen mit den Wespen begann es dann auch wirklich – wie von allen Kanälen angekündigt - zu schütten, also panische Flucht der gesamten Gästeschar in die kühleren Innenräume. Vor dem Essen war wegen einer Unverträglichkeit der Austausch eines Gangs besprochen worden. Meine Frau wollte sich dem anschließen, damit der Tisch einheitlich bedient werden konnte, war kein Problem. Wir merkten dann am aufgelegten Besteck, dass der Wunsch meiner Frau vergessen worden war, denn sie bekam das Steakmesser für das ursprünglich vorgesehene Rindfleisch. Nicht weiter schlimm, denn meine Frau mag Rindfleisch und hat damit kein Problem. Dann wollte sie aber gerne einen Rotwein dazu. Der Sommelier war jedoch einfach nicht bereit zuzuhören und diese Bestellung entgegenzunehmen. Schwupps, hatte er den Weißwein unter uns aufgeteilt. „Ach so“ hieß es dann, als der Rotweinwunsch zu ihm durchgedrungen war. Ich trank dann zum Fisch aus dem Glas meiner Frau. Als der Weißwein leer war, wollten wir noch einen Rotwein nachschieben. Wir beide wollten aber nicht den zuvor meiner Frau gelieferten Rotwein von Mallorca trinken, der zur Weinbegleitung gehörte und doch eher schwach auf der Brust war. Was anderes habe er nicht, meinte der Sommelier. Hallooo, kein Glas Rotwein!? In einem Sternerestaurant!? Im Abdrehen erklärte er aber doch noch, dass er wohl eine Alternative „finden“ könne. Das Fundstück wurde uns als ‚Barolo` angeboten. In der Hand hielt er aber eine Flasche ‚Dolcetto D’Alba‘. Das ist ein ganz anderer Wein, der zwar auch aus dem Piemont kommt, aber aus einer ganz anderen Rebsorte (Dolcetto) gemacht wird als der Barolo (Nebbiolo). Qualitativ rangiert der Dolcetto weit hinter dem edlen Barolo und auch hinter dem ebenfalls gebietstypischen Barbera. Ein schwaches Bild!
