I've been a regular patron at Pablo's in North Goa for years, and I can confidently say it's one of the best spots in the area! From the moment you step in, you're greeted with warm, friendly service that makes you feel right at home. The staff always go above and beyond to ensure you have a fantastic experience.

The cocktails at Pablo's are nothing short of amazing. Each drink is crafted with precision and creativity, offering a delightful burst of flavors that you won't find anywhere else. Whether you're a fan of classic cocktails or looking for something more adventurous, the menu has something for everyone.

But the magic doesn't stop at the drinks. The food is absolutely delicious! Every dish is prepared with the freshest ingredients and bursting with flavor. From small bites to hearty meals, there's something to satisfy every craving.

One of the things I love most about Pablo's is the variety of pop-up events they host. There's always something new and exciting happening, which keeps the vibe fresh and engaging. The ambiance is lively and fun, with plenty of cool decor to enjoy while you sip your drink.

And let's talk about prices – they're incredibly reasonable! It's rare to find a place that offers such high-quality food and drinks at such great prices. Pablo's truly delivers on value without compromising on quality.

Why would you usually want to support a small business, a small place? Because it will be unique, it will be "nice", right? At least that is what you expect. Well I'm here to burst your bubble. Do not expect this from Escobar. They have received patronage from people with this exact expectation, and failed horribly to scale up to it. They have received word of mouth publicity that draws people to them, which means massive crowd for a tiny place. Worst of all, ill managed. There's no queue system. You'll keep waiting and waiting and waiting, and once (after an hour of waiting) someone vacates a table, some random person gets it. Food and beer is very very average. The quaintness of the place used to be it's unique selling point. But this irself has become garbage because of the crowd, definitely not worth the wait. You can hope to get a teensy table if you reach at maybe 3 or 4 pm on a WEEKDAY. anything after that and prepare to be severely disappointed, mes amis. And like I said before, people reach at 4, grab one beer, ONE beer and occupy the table for 4 hours. No professionalism on Escobar's part to keep it moving. A suggestion from an earlier loyalist of Escobar. Don't go. It's not worth the trip.dont waste precious moments from your holiday time to be rewarded with this...

Pablos is one of the first bars I was taken to when I moved here and I haven't really ventured too far away from it. The seperate space at the front and back means you can pick your vibe for the night. The food is surprisingly delicious - watch out for the specials, they change daily. There's always love in the shape of dogs and the owners are wonderful and straight forward people. Bars can sometimes be unsafe places but the owners make sure that you're taken care of and don't tolerate disrespect. The staff is fantastic and will get to know you and your drink of choice and I love the combo of self service and staff support. The atmosphere feels comforting and homely. They've got some pretty unique beers on tap too and their cocktails take on all sorts of goan twists. If you happen to visit during uraak season please try the various uraak based cocktails. Actually theyve managed to spin some magic with kokum in general and have a greats selection of fenni infusions. Overall, it's a wonderful reliable local bar with great crowd, delicious food, and home style atmosphere.

Pablos shows how a small place can do so much. It's a lovely place with some amazing Goan vibe, chill music, great menu, and DRINKSSS!! Gotta say once you enter here, you just don't wanna leave. There are two sections to sit, one at the front and the other at the back. I loved the back area around the bar. Loved the drinks here, especially chilli mango cocktail we tried. Besides, you get fresh brewed beer here, I tried stout beer and it was great. The staff is super helpful and the self service concept works really well here. The crowd trickles in after 9-10 pm, and that's when it gets really crowded, so better you find a place to sit before that. It's not even too expensive or something. Just can't wait to be back in Goa and visit this place again!!

The food menu isn’t very wide, but the items we tried were decent. The Pork Cocktail Sausage was good with enough quantity for one person, and the Burnt Garlic Broccoli was okay, though nothing exceptional. Portion sizes overall felt a little small for the price. What I really enjoyed was the beer on tap. The Susegado Dortmund Lager was light, crisp, and super refreshing — perfect for an easy drink. If you like vanilla notes, the Vanilla Porter is worth trying too. Overall: Food ⭐4/5, Ambience ⭐4.5/5.

Pablos was absolutely an incredible recommendation from my friend. Fell in love with the place. The vibe, the alcohol, the food, all of it- top class. Bonus points for cutie dogs lying around looking like they were the ones drinking. Must haves - Kokum curry cocktail and the Piccante. I mean they both blew our minds. We had the last piccante they had in stock and I still think of that nice spicy drink. Their chorizo fries and butter garlic prawns were awesome. Even the nachos were tasty and filling. It's one of those iconic places you do not want to miss. The owners are super sweet and the staff will even recommend stuff if you ask.
