With the term FINE DINE being not explored much in the city where still some places feel FINE DINE but food doesn't speak for itself, here comes brainchild of like-minded passionate foodie cum professionals, THE BUTLER opening in Banjara by-lanes to deliver something simple and yet to be explored by the land of Biryani.
They are focusing on delivering 4-course meals from unique international cuisines to Hyderabad which will rotate on a weekly basis for lunches. With an ala carte menu also not more than 10 items, their focus is on Quality and not quantity. This newbie is one man's love with India during his first visit. Urs Gerschwiler from Switzerland has been supporting a few social programs along with friends. He fell in love with India, when he visited an Orphanage in 2017, shut his business in Swiss and met up with Chandan, a business consultant with the Government of Switzerland, Germany & France, supporting businesses from there with plans and investments in India. Both minds curated this cute little place called THE BUTLER. Now indeed we can say FOOD UNITES PEOPLE :)
Urs and Chandan were clear on what they wanted and it starts from their plan to send fresh young uber-talented cooking school graduates Dharamraj Pal and Mayur Shelke to France to be trained under Michelin star Chef and deliver the finesse in cooking back at home.
Though the place is small, they have made proper use of decor and ambiance to keep it represent calm and fine dining feel with ample space for small packs to enjoy a hassle free meal. Their intent is to rotate their 4-course tasing menu across France, Italy, Lebanon, Singapore, Germany, and much more which already sounds exciting. After a walk-through of their venture start, we were served a clear 4-course meal.
Started off with TOMATO SHORBA, a simple classic Indian soup served with home made toastie, the soup itself was clear, delectable, and aptly spiced. With such a stellar start, we were excited about how the rest of the meal would be. Next came RAVIOLI, done with fresh homemade cheese. Filled with Ricotta cheese and tossed with lamb ragu, this dish just nailed the Italian flavors to allow the natural sweetness and saltiness of tomato to speak for itself and didn't overdose with salt or other flavors. The natural feel of it oozed in each bite that I cleaned my plate in no time. Next came the main course where they tried FISH GRATIN. A generous portion of red snapper cooked over a bed of mash and okra, and drizzled with herb spiced bread crumble, the dish looked FINE DINING from the get-go. Visually stunning, the dish didn't disappoint me in its clean flavors again. The contrast from fried Okra and the red snapper just worked brilliantly which your mind fathoms to understand but your palate is on a gastronomic ride.
With such high-quality dishes, default my mind expected a stunner at dessert section which young talented grad Mayur nailed it. RASMALAI CAKE soaked in cardamom and nutmeg milk and served with pistachio and rose petals toppings is probably the most innovative and International take on this Indian classic with no injustice to the original flavors and feel, This is one of the desserts which bedazzle you in the thought process but it JUST WORKS !!!!
We ended our meal with the utmost respect and love to the team that's working small and simple and to serve such international quality dishes from a small kitchen. See it to believe it. The young talented Chefs Dharamraj Pal and Mayur Shelke with the level-minded owners Chandan and Imelda are to bring in something unique to the city and I feel they got it right from the GET GO. I just hope they don't compromise for the Hyderabadi palate to change or alter this. With their vision and some good social media buzz, they will definitely create a loyal following for themselves. I was awestrucked with the beautiful, elegant yet subtle, royal and sophisticated styled interiors that uses classic elements with a high degree of embellishment in every corner of this place.
We were accompanied by Mr. Chandan (the owner of this place) who is a very gentle, humble and passionate foodie too. He helped us understand the concept and core-existence of this fine dine amd how they use all premium imported ingredients in each and every dish they serve.
They believe in doing everything from scratch, starting from peeling, chopping, and cooking of any dish, only after receiving the order. This makes their food true to it's taste, not losing it's authenticity, taste and freshness.
I tried out 2 of their Soups - Alfredo Lamb & Creme of Asparagus. To my super surprise, both of them tasted heavenly.
The Alfredo Lamb soup was undeniably luscious and satisfying, the soup is surprisingly not overly heavy or light.
The Creme of Asparagus was tasted creamier, rich, amd the cheese pureèd to silky perfection.
Then I hopped on to the Appetizers - Poached Apple with Blue Goat Cheese, Prawn in Jalapeno drip and Quiche de Poulet.
The Poached Apple with Blue Goat Cheese Salad was a symphony of flavours. I love salads, Apple and goat cheese, but this is the first time I’ve tasted them combined together and it turned out to be really good, addictive good.
Next comes, Prawn in Jalapeno drip, which was crunchier from outside and equally soft and meaty onve you take a bite inside. The Jalapeno drip complimented it really well.
Then we moved towards, Quiche de Poulet. This was my personallll favourite among all the appetizers. This classic popular French pie/tart can be often seen in many cafès and bakeries. But if you want to try the slow-cooked and traditional one, then you must have it here.
For the Mains we kept it simple with - Lamb Ribs in Red wine and Greek Yamista (Chicken). The Lamb Ribs were well cooked and soaked in wine, and every bite of the meat screamed it out totally.
The Greek Yamista is a traditional rexipe with any vegetable (here Bell Pepper) stuffed with meat/veggies amd baked till perfection. This was a blast in my mouth with perfect amount of cheese, slow cooked chicken and veggies baked inside a Bell Pepper, which had a softness and a subtle crunch at the same time.
Last but not the least, I have become a biggg fan of their desserts - Coffee Cake and Colors of Nature. I have no words left describing these heavenly desserts.
Coffee Cake was top gpod to handle. Being a hardcore Coffee lover, I had huge expectations from this particular dessert, and to my surprise it super-exceeded all of it.
Also, if you're a true fruit rejoicer and loves combining it with your desserts, then Colors of Nature is the best dessert you'll have in Hyderabad.
Overall I had a never-forgetting, splendid and extravaganza experience in Soul Fine Dine.

Read moreRecently got a chance to dine in here and taste the authentic european cuisine ever in Hyderabad. This place has a royal fine dine setup which is simply rich and classy. I was highly impressed with the interiors and the luminosity of this place. A perfect place for dinner dates. Mr. Chandan, the owner of this place was a perfect host and guided us through all our dishes. 😊
We started off with the delicious soup called Creme of Asparagus which was simply rich, creamy and had a blast full of perfect flavours. Highly impressed with this one. Must try for sure. 🤩
For salad we had Poached apple with blue goat cheese which was no doubt very delectable with the finest of ingredients. The sharp flavours of the goat cheese were simply on point. It really went well with the apple slices.
For the antipasto we did have two very great dishes. The Quiche de poulet being my favorite one. This was the finest and most yummiest quiche I ever had. The perfect tart with the right amount of crumble outside and cheesiest inside. Had it warm to feel the best savoury flavours of chicken with cheese and seasonings. A must try for sure. 🤩 The second appetizer Prawn in jalapeño drip was quite decent. It could have had the right amount of seasonings added, but otherwise it was surely a great starter.
For the main course I had Greek Yamista - Chicken. This dish is generally made with tomatoes or bell peppers stuffed with minced meat, veggies, cheese etc. and then baked well. I had the bell peppers one which was quite an experience. This was very fulfilling dish which lifted my mood for sure. The flavours were great and I could smell the finest quality ingredients.😍
All the ingredients used in their kitchen are outsourced and are imported premium in quality. Also a special mention to the very patient staff, they were very well behaved and courteous. 😊
We ended our day with two of the finest desserts. Surprisingly desserts were too good. The first dessert Coffee cake was an experience in itself. You would definitely love the dark flavours if you are a coffee lover. A very balanced dessert. 😍 Colors of nature was my persp favourite dessert. Trust me it was extraordinary. Highly recommend it to everyone. A very subtle and mild one, perfect for people who are not having a sweet tooth.
