This is a place like from another time, and that we felt incredibly privileged to have experienced for one night. Gianni welcomed us warmly and guided us through the extensive selection of cold cuts and cheeses, of which we especially loved the former. You could really tell the quality of the product and the love that went into the selection of each of the raw materials. I adored the coppa di testa (also eaten warm upon Gianni's suggestion) and the leg of lamb but also the prosciutto, coppa, bresaola and salami were beautiful! The cheeses showcased the region's astounding variety; admittedly, not all of them were to our taste but it was still great to get to know about them and the passion of our host. Both white wines we had went exceptionally well with the food. One thing I would criticize is the bread selection - I enjoyed the schüttelbrot and grissini (on their own mostly) but felt that both bread and focaccia, while keeping with the spirit of the establishment, were just not very good. The bread itself was very dense and reminded me of a homemade loaf without much gluten development (and salt), and the focaccia had a nice tang from the sourdough yeast but lacked the airiness and oiliness of a "real" focaccia. In a time of more and more mass production and anonymity, La Fiaschetteria gives you a warm and personal experience. The place is small but cozy, some people will say it looks like a warehouse but for us it contributed to the ambiance. We liked it! We visited this place last February, and when we came back in June, Gianni simply recognized us. That means something. So 5 stars for ambiance and hospitality. Than the food... It is unmatched. The real ´cucina Bergamasca´. Every plate comes with a story of how it was ´born´ and refined. And again, Italian food is almost good at every streetcorner, but Gianni´s dedication and enthusiasm gives it even more flavour. And yes, sometimes you will have to wait a bit longer and yes, sometimes you will hear a microwave. So what? Dining like this may take time, they work the place only with the two of them (and they work really hard) and a modern kitchen is simply not possible in a place like this. First thing you have to know is that Gianni dropped everything to start his own restaurant 8 years ago, this is his passion.
He cooks for his entire restaurant and sources every ingredient himself. His French Alpes/Italian origins justifies the care that he puts into all of the ingredients that he sources to make some delicious, authentic and very affordable meals.
We had a great plate of cheese and meats along with some great wine (all locally sourced). Not only was it delicious, but if you take the time to ask, he will gladly tell you about the care and passion that goes into his dishes.
