We arrived on the first day of reopening in April 2025. The season had yet to take off and there were only three tables. It was nevertheless the best meal we had for some time. All the dishes were simple but the ingredients were local and of the season - fresh and chosen with great care. The very simple steamed artichoke was tender and flavoursome , contrasted with creamy ricotta. The next course of sliced prosciutto- exquisite quality inspire of its humble origins set off with a crispy fennel salad and just a touch of EV olive oil. Very simply seasoned so the ham shone through. Then home made ravioli filled with ricotta, set off by a mushroom, wild asparagus and tomato sauce. Not too much tomato, generous slices of porcini and a smattering of perfectly cooked slender asparagus. Every ingredient perfectly balanced. Do not order sausage… impossible to eat. P.S. I can understand that owner is trying to protect its good name, but I think it is not right to say, that I am liar only to try discarding my opinion. Probably you did not read properly: we waited for putting orders of everything because waiter was busy taking with friends.
