I couldn’t love this restaurant more, including the absolutely kind, talented, curious, generous chef, Riccardo. From the start, the setting, in an old lofty cellar, is transporting. Then, the décor! I especially loved the hand embroidered napkins that are placed over the lights as though lamp shades! We ordered the tasting menu because a friend had told me this place was the real deal. And she was right! It was a hit parade, from the fresh goat’s milk ricotta to the cured trout with celeriac salad to the pappardelle with ragu which had the best texture of any pasta I had during my entire trip to Italy. (As I like to say, the pasta talked back between my teeth.) It was a lot of food so come hungry, but having had a few other tasting menus before, it wasn’t as intense and uncomfortably filling as it could have been. The sommelier also knocked it out of the park with wine pairings and my favorite: the storytelling about the wine. This is a meal I won’t soon forget! Go!

Invece devo dire che 5 stelle per noi sono anche poche... Non avevamo prenotato e non ci sarebbe stato posto se per caso una famiglia di tre persone non avesse disdetto un attimo prima del nostro arrivo. Inizio dall'ambiente, veramente accogliente. Sembra di entrare nella taverna (grande) di un privato piuttosto che in un pubblico esercizio. L'atmosfera calorosa, le luci soffuse, gli oggetti etnici appesi alle pareti e la divisione in vari ambienti non grandissimi esaltano questa sensazione. Personale veramente tanto professionale quanto simpatico (non è facile abbinare le due cose). Dopo poco esserci seduti è arrivato del pane fatto in casa con una mousse a base di ceci. ottimi entrambi. Abbiamo preso delle fettuccine al pomodoro per la bimba, un antipasto, sformato di zucca speziata con spuma di robiola e nocciole molto buono e saporito e un un primo , ravioli cacio, pepe e topinambur croccante che sembrano facili ma in realtà sono un piatto insidioso.. Tutti i gusti erano molto equilibrati e si sentiva benissimo tanto il cacio quanto il pepe. il topinambur era abbastanza neutro ma dava la croccantezza e si sposava molto bene con gli altri sapori. Consigliatissimo. A seguire rotolo di coniglio, sedano rapa e polenta di patate e baccalà alla trentina, anche questi due piatti strepitosi. Per finire 2 dolci, una tenerina perfetta (mia moglie è una esperta di tenerina nonché grande amante) e un semifreddo alla cannella con prugne.. che è stato la ciliegina sulla torta della mia cena. Mai mangiato in vita mia ma assolutamente da riprovare in quanto il mix di gusti creano in bocca, per me, un effetto sublime. Torneremo sicuramente.

Today was the day of the reopening after a break. A reservation helped to get a table. The decor of the premises is extraordinary, the cash register at the bar in the rearmost room. The menu is fun and the dishes are fine-sized. All in all, I have to subtract one star, because the ravioli weren't as special as advertised on the menu, the service wasn't as attentive as you would expect at this place, the music just didn't fit: Stones and Beatles. It was probably all on the first day after the break and everything has yet to settle in. But four stars are good :-)

Today was the day of the reopening after a break. A reservation helped to get a table. The decor of the premises is extraordinary, the cash register at the bar in the rearmost room. The menu is fun and the dishes are fine-sized. All in all, I have to subtract one star, because the ravioli weren't as special as advertised on the menu, the service wasn't as attentive as you would expect at this place, the music just didn't fit: Stones and Beatles. It was probably all on the first day after the break and everything has yet to settle in. But four stars are good :-)

Slow-Food Restaurant wie aus dem Bilderbuch

Levico Terme ist ein historischer Kurort mit Thermalbad im Brenta-Tal in dem der Charme des vergangenen Jahrhunderts lebendig geblieben ist. Der Levico- und Caldonazzo-See machen das malerische Bergdorf zu einem der bekanntesten Ganzjahres- Ausflugsziele in der Alpenregion. Im Zentrum der Altstadt befindet sich das vielfach ausgezeichnete Restaurant Boivin nur wenige Schritte entfernt vom Kirchplatz. Es befindet sich versteckt hinter einer alten Holztüre im Gewölbekeller eines historischen Hotelgebäudes. Wer sich nicht gezielt dorthin begibt, läuft vermutlich daran vorbei. Nur eine unauffällige Steintafel, die das Restaurant als Mitgliedsbetrieb der Vereinigung ausgezeichneter Trattorien Italiens und das rote Blechschild des Guide Michelin signalisieren, daß hier erstklassige Küche angeboten wird. Wir haben das Boivin aufgrund der Empfehlung im Slow Food Führer Osterie d'Italie 2022 aufgesucht und wurden nicht enttäuscht. Die rustikal-nostalgisch eingerichteten Gasträume im Gewölbekeller sind ein Geheimtipp unter Feinschmeckern und Anhängern der Slow Food Küchenphilosophie. Die kleine häufig wechselnde Speisenkarte wird von der saisonalen Verfügbarkeit frischer regionaler Produkte bestimmt. Wir hatten einen sensationellen Steinpilzteller als Vorspeise: Superfrische riesige Pilze, die gegrillt, gebacken und als roher Salat mit Rucola und Parmesan seviert wurden - eine unglaubliche Aromenvielfalt. Auch der Apfel-Brotpudding mit Robiola und Treviso-Radicchio sowie die gebackenen gefüllten Zucchiniblüten überzeugten mit purem Geschmack. Die feinen hausgemachten Tagliatelle mit Ragout vom Milchkalb schmeckten ebenfalls außergewöhnlich gut. Wir konnten uns zum Abschluß dieses besonderen kulinarischen Erlebnisses gerade noch ein Dessert teilen: Die piemontesische Spezialität Bunet, ein Pudding aus Kakao und Amaretti mit Sahne schmeckte intensiv und die Portionsgröße reichte locker für 2 Personen. Erwähnenswert ist noch der außergewöhnlich freundliche und deutschsprachige Service und die für unseren Geschmack perfekte Musikauswahl. The passion and care for what they do in the kitchen is evident in every dish, be it a perfectly cooked main of pork or rabbit, or a primo of pasta with artichoke, or a starter of artichoke salad. Not to mention the desserts: we tried four (two to take away) , with a "bunet" (a chocolate creme caramel Piedmont style) one of the best I've ever tried (and I've tried quite a few) and a mandarine crostata (tart) particularly intense yet light as air.
