Pinza romana ottima, focaccia al rosmarino notevole, non molto alveolata ma ben fatta, dichiarata con sale maldon ma in effetti ne ho trovato ben poco, direi addirittura che era un po indietro di sale, peccato. Poi il dolce, un semifreddo alla nocciola con gelé di cassis. La gelé era strisciata velocemente sul piatto e quindi difficilmente assaporabile con il semifreddo, c'erano due elementi croccanti, una tavoletta di cioccolato spezzata non male e alcuni croccantini sparsi qua e là. Un po pochino per il livello che si propone il titolo della ricetta. Consiglierei un crumble al cardamomo dimensionato al perimetro esterno al bastoncino di semifreddo, uno strato sottile di gelé al cassis della stessa dimensione, ma una gelé, non un toppino sgangherato strisciato sul piatto, e disposta sopra al crumble e infine, sopra a tutto il bastoncino di semifreddo. Le rotture di cioccolato in appoggio ci stavano bene anche se avrei sterzato su un cioccolato più marcato dal cacao.
