I was recommended this restaurant by a local friend who is a highly qualified hospitality professional and sommelier. I am very pleased that I followed his recommendation: This restaurant is a rare find - it is very professionally run (serving staff and kitchen staff are really top class), with a wonderfully balanced menu with an additional and nice offering of several special dishes of the day, excellent presentation, creative, delicious cuisine with high quality ingredients - the veal tartare bears witness to this, cuisine with a nod to local traditional dishes but creatively redesigned with wonderful flavour-texture combinations (very much to my taste!), impressive wine list with local wines from highly regarded local wineries at very reasonable prices to the very top of the top (Roederer Cristal, to name just one of the many top quality wines available). The Chef who is the proprietor came to greet us and made us feel extra welcome (remembered me from my reservation phone call), the waiter did an excellent job in looking after us and offered good and helpful suggestions when asked, our every request was swiftly seen to, nothing was too much trouble. It was a pleasure seeing professionals at work and taking pride in what they were doing. I will definitely be back and I highly recommend this restaurant. The dishes are exquisite and executed to perfection. The food is refined with a strong nod to the traditional Apulian ingredients and dishes. Their veal liver is the best I’ve ever had…I normally love it pink and when this one arrived, cooked through, I was a little concerned but when I tasted it, it was amazing…served with an apple ‘sauce’ it was more reminiscent of foie gras (guilt free) and tasted amazing. We only drink Apulian when in the region and their selection is very good. Read moreWe had the degustation menu for 60€. The aperitiv, starter and desert were excellent. The pasta dish a bit disappointing, but ok. The main was a dish made of liver, lung, intestines. It was well done and one of us liked it. The other one tried but couldn't eat it. The waiter offered to change it, but then came back from the kitchen with the info that they won't change it after all. The dish wasn't wrong per se, but in our opinion the waiter must tell the guests about these ingredients being part of a surprise menu. Too many people don't like these things. And if that doesn't happen, the kitchen has to respond as the waiter thought they would. If not that's just bad service. It's a pitty because otherwise we would have left this restaurant enthusiastically and described the service...
