An Unforgettable Culinary Journey at Calce Bianca – Ostuni
Our dinner at Calce Bianca was nothing short of extraordinary. From the moment we arrived, we were captivated by the refined elegance of the restaurant and the warm welcome from Marco, the host, whose passion and detailed explanations elevated the entire evening.
We began with three exquisite amuse-bouches, each a delightful prelude to what was to come. This was followed by a tasting of three premium olive oils, paired with freshly baked breads – a beautiful showcase of Puglia’s flavors.
For starters, we chose Il Polpo (octopus), which was tender and beautifully balanced with its accompaniments, and La Barbabietola (beetroot with tofu), a surprising and elegant dish where every bite felt like a discovery.
Marco recommended a rosé from the local winery Giovanni Aiello, served off the menu. It turned out to be an absolutely brilliant suggestion – delicate, fresh, and perfectly complementing the starters.
Our mains were equally impressive: the Il Tonno, a slow-cooked (sous-vide) tuna that melted in the mouth with incredible depth of flavor, and the La Lasagna, a “reimagined” version of the classic that was sophisticated, comforting, and utterly delicious.
Desserts were nothing short of a revelation. The La Mela e La Frolla combined apple and delicate pastry in a way that felt both comforting and refined. I opted for the boldest choice on the menu, L’Aglio, Il Cocco e Il Cioccolato – garlic, coconut, and chocolate – and it exceeded all expectations. Complex, daring, and perfectly balanced, it was an unforgettable finale.
To close the evening, I enjoyed their signature cold brew single-origin coffee from Colombia, smooth and refreshing – the perfect end to a perfect meal.
Every dish at Calce Bianca is an artful blend of tradition and innovation. The presentation is elegant, the flavors thoughtful and layered, and the service impeccable. It’s not just a dinner; it’s a memorable journey for the senses.

Read moreI cannot stress enough how amazing this restaurant is! So great, in fact, that we went twice in just nine days! Ostuni has countless restaurants, so it’s impossible to try them all — and we truly consider ourselves lucky to have come across Calce Bianca.
As a couple, we enjoyed a wonderful meal in a beautifully romantic atmosphere. Everything was absolutely delicious, from the amuse-bouche to the dessert.
Marco, our host, ensured we had a pleasant, fun, and truly unique experience. He recommended excellent local wines and gave us a thoughtful explanation for each dish we tried.
The food itself was outstanding — fine dining at its best. Perfectly cooked, beautifully balanced flavors and textures. Each dish stood out compared to the other meals we had in the city.
We were so delighted that we came back on our very last night, knowing we would end our stay in Puglia with a memorable dinner. We were deeply grateful to the chefs for preparing a special dessert that wasn’t on the menu for us — with cinnamon, pistachio, cocoa nibs and raspberry — absolutely delightful!
Don’t hesitate for even a second: if you walk through the doors of Calce Bianca, you won’t regret it.

Arrived at the door at the opening time, the waiter asks us if we reserved a table and when we said yes, she looks surprised and says “I don’t think so”. Then she says maybe there has been a problem with their system (my husband shows the reservation confirmation via email). They seem to be unpleased to have 2 small kids as guests despite the restaurant is empty. The 1 year old kid starts playing with few plastic toys while waiting for food to be served when we are asked to put a napkin on the table to avoid him to scratch the table. Few little comments made us feel really unwelcome. The restaurant wasn’t busy and eventually 2 other tables of people filled up when we were already about to leave.
