We were lucky enough to stay close to Bar Vabres for 4 months, coming here almost every day.
All of the baristas (who speaks English well) make amazing coffee art, ALSO with plant milk/oatmilk. Actually they are so good at it that they offer various individual barista courses (I have personally taken one and it’s really recommendable!). The owner Alessio is a well-known barista consultant, who imports coffee beans and runs his own roastery. Vabres are the only ones in Sicily to import Oatly directly through their own shipping company (and they also run a package shop next door).
The family-run business originates from 1969 and is located near the Central Station in a local neighborhood. This gives a feeling of authenticity with a steady flow of regular customers all day that come to have a chat with the employees, while grabbing a quick espresso with one hand and a take-away in the other (be sure not miss out on the arancine, they are to die for!!). Btw, their cornetto is vegetarian as it made using butter similar to a croissant (not using lard, “strutto”, which you will find in a lot of other pastry shops around town).

It is located off the beaten tourist track in the slightly shabby side streets near to the main train station and is a genuine find. Obviously you get great coffee in many places in Italy and all over Palermo. But it is almost always Italian-style espresso and there is nothing wrong with that. But if you want single origin drip or aeropress coffee, straight black or in drinks like a flat white, that is sometimes harder to find. Bar Vabres is serious about all forms of its coffee and they always have a selection of single origin coffees. The Ethiopian flat white that I had was one of the best coffees I have ever had in Italy. There is an interesting price disparity: €1.20 for standard coffee (espresso), €2.00 for latte macchiato (aka cafe latte to non Italians) and €3.50 for a single origin coffee, presumably reflecting the cost of the beans.
