The regular pizza is pre-made and the gluten free pizza is made fresh. No risk of cross contamination as the gluten free pizza bases are in foil trays. The vegetables were cut and grated before my eyes so super fresh. The guy even uses a separate pizza cutter for the gluten free pizza. The price is very reasonable as gluten free puzza in a restaurant can be so expensive in Italy. Perhaps the pizza has less cheese than I am used to but I am Australian and not about to tell an Italian how to make pizza! The crust comes out doughy but crisp on the base, really nice. The whole place appears to be run by one man who does everything from prep to cleaning. The GF menu is the same as the regular menu, his entire offering can be replicated in coeliac safe versions. Italy is generally behind in this regard but here the message is well understood.
