As I ascended the slope to Maison Fujiya, the white majestic building seemed to gleam in the dusk, sending me positive vibes. A staff member greeted me on the ground floor and whisked me off to the second floor in a lift. After making a somewhat grand entrance into the dining space, I was seated at a table, overlooking the slope, where I could dreamily admire the dusk to night views. The accompanying food was just as spectacular (I chose Menu F and a glass of chardonnay). The service was immaculate. The staff had a dictionary with a picture of a stingray, ready to explain to me the name of the dish. Other diners had already taken photos of the menu this week, so I would not repeat it here. However, my favorite dish was the innovative "ray cheek" or the cheek of stingray that was mashed and deep fried with curry and bread (?) coating, while the black coating was the result of the squid ink. We waited in the cold for an hour before the shop opens and decided to give up thinking there may be no table available since it’s a holiday peak season. As fate has it, we were leaving and met a handsome suave man who was clearing the snow and he said ‘Yes’. We opted for the Christmas fine dining menu. It was one of the best fine dining we ever had and priced so reasonably. Every dish was aesthetically pleasing, freshest ingredients and tasted the best it can be. Thank you, Fujiya-san. Read moreWe love what Chef Fujiya Keisuke and his team (especially Hajime) presented for our dinner at Hakodate tonight. Every course brought delight to the eyes, and our taste buds was thrilled to no end. The piece-de-resistance, beef cheek with red wine, came after delectable courses of fish, amuse bouche and a Paris-worthy baguette with Hokkaido butter and pork rillettes, and it’s an understatement to say that this restaurant is a hidden gem.
As good as the food was, the service especially that of Hajime and Chie was beyond the typical Japanese hospitality. We are not the fussy fine dining type, and they made us feel so welcome and at home. We would love to be back again, and if you can, you should definitely give Fujiya-san and team a try.
