We just came back from an amazing 2 week 'foodie' trip to Japan, and this was easily one of, if not THE best meals we had there. I'm a real food obsessive and have been lucky enough to dine at some incredible restaurants around the world, but if I could go back to any of them right now it would be Respiracion in Kanazawa. Everything about the experience - from the calming pre-lunch Tea that was served to us in a beautiful, dark room with amazing wooden table in front of us...to the last bite of our petit fours, was memorable. The restaurant itself is stunning. Very clean, modern but in character with the beautiful old building that its situated in. We had a perfect view into the kitchen area, where the chefs worked with such focus and care. All of the staff were friendly, warm and very attentive. The food itself was absolutely stellar. Spanish concept, but with the finest Japanese ingredients. We had, for example, one of the tastiest paellas I've ever eaten (and I've spent a lot of time in Spain and Portugal), but with Firefly Squid, which are native to Ishikawa and only in season for one month. The squid were brought to our table alive, to begin with, so that we could see them; before they were taken back to the kitchen and added to the paella. They were incredibly tasty and really added to an already delicious plate of food. We had also had venison, which wasn't just the best venison I've ever eaten, but some of the best red meat I've ever had, period. It just melted in my mouth. This was also my first time eating bear meat (!!), which was used, ingeniously, in an empanada. To die for. Respiracion is my new favourite restaurant in the world.    Read moreFantastic dinner experience. We made a booking several months ahead of time because we were traveling from Yamaguchi-Ken to eat at this restaurant. The staff speak very limited English, and our Japanese is limited but we made it work!
Upon arrival, you are ushered to a waiting room. The room has a beautiful wood table and there is spa music playing.
Once itâs time for dinner, they will seat the parties one by one from the waiting room to the dining room.
Each course was creative and outstanding. The staff had English translated descriptions of each course printed on a card for us. My favorite was the lily bulb course and the gazpacho- very creative and unexpected!
The only thing lost in translation seemed to be the wine pairing. We eventually figured out that other tables around us were getting a wine pairing with each course- but we were never offered a pairing course. I think it wouldâve been helpful if they would have had a card explaining the wine pairing in English as well and we wouldâve ordered it- something Iâve seen at other Michelin star level...
