This review has been a long time coming. My friend and I (Aussies) dined here in January of 2023, when we were travelling on our Shikoku leg of our trip.
Firstly, the owners are a married couple who showed us the most outstanding hospitality. We called ahead to book a table, it was a quiet night for them and they were going to close early, however, they stayed open for us. As we were the only table in the restaurant, we had the opportunity to speak with the owners and learn more about their lives and the restaurant’s philosophy. They are amazing people, if they are reading this, thank you for your kindness.
Now the food, for context, I am a trained chef, and have worked in the industry for over a decade. The pizza here is by far, the best pizza I have ever eaten! The owner is the chef who made our meals that evening and we were lucky enough to sit with him after our meal and share a whiskey (which for an establishment of this size, the quality of whiskey they served was astounding). Through our conversation, it was clear that his passion for his craft was immense. I was surprised to learn that this was not a life long career for him. His love for the food and strict quality margins, is something I am used to seeing from head chefs of fine dining restaurants; people who have devoted their life to their art, and build their reputation and their names within the industry. There is significant time and skill required to create their pizza dough, which is aged (if my memory serves me correctly) for at least 48hours, and the locally sourced organic ingredients are exceptional. You can absolutely taste the difference!
The only negative thing I can say about this place is that it is not in every city in the world. But I understand, if it was, I’d imagine the quality and service would not meet the standards of this amazing boutique pizzeria.
